I am constantly working on different flour blends for my wife's gluten issues. And I also love coming up with crazy concepts.
Country Fried Steak Fingers (in Korean marinade) breading, a few in regular AP flour the rest in a pork rine & rice flour blend. It can work but not so well for this application but the flavor was on point.
And a Gochgang gravy as the dipping sauce. Now low key, this really was the star.
