Enoki pancakes and scrambled eggs 🥰

1 bunch of enoki mushrooms
2 Tbsp ap flour or rice flour
2 eggs
2 Tbsp shredded carrot and yellow onion
2 Tbsp white part of the scallion, save the green tops for garnish
1Tbsp microplaned frozen jalapeño peppers (provided by ☺️)
1Tbsp chili oil
S & P for flavour

Trout benedict with avocado "toast", pepperoncini cream cheese, spinach, crispy skin trout, poached egg, hollandaise and dill 👌

Avocado "toast" is so simple to make!
Smash up an avocado
Crack an egg in
Handful of shredded cheese
Pinch of salt and pepper
Mix together, spread on a sheet to bake (12-15 min)or air fry (10-12 min) in the shape of toast. You can also make avocado fries this way, just shape them into fries!

Sorry everyone! I was pretty sick for a while there. Back up and somewhat functioning though 🤘 experimenting with omelettes! Bacon, hashbrowns, tomato, avocado, turkey, cheese cooked into the egg 🤌 enough for 2!
