Banana Bread

This banana bread recipe is loosely based on the quick bread recipe from the Betty Crocker cookbook. I use it as more of a “skeleton” recipe — a simple foundation that I adjust and tweak for our family’s taste.

The original recipe is wonderful on its own, but I like to swap in brown sugar whenever I can and add a little extra cinnamon. It also calls for 1½ cups of mashed bananas… but honestly, measuring bananas is messy, so I usually just toss in whatever ripe bananas we have.

One other change I make is replacing processed oils like vegetable or canola oil with butter. Butter may not sound like the “healthier” option at first, but in our kitchen we prefer it over highly processed oils.

P.s. What cooking alternatives have you found useful, especially for processed sugar? I’ve been searching for something to replace sugar, however it’s a struggle!
