🍞Sourdough Focaccia:

Ingredients
• 100 g active sourdough starter (available on our page)
• 375 g water
• 30 g honey
• 500 g bread flour
• 11 g sea salt
• Fresh herbs of your choice, optional
• Olive oil (for coating the bowl, pan, and brushing the top)

Method
1. Mix dough – Whisk together starter, water, and honey. Add flour, salt, and herbs. Stir until a sticky dough forms.
2. Rest – Cover and let the dough rest for 1 hour.
3. Bulk fermentation – Perform 4 rounds of stretch-and-folds, every 30 minutes for the first 2 hours.
4. Ferment – Cover and let rise on the counter for 6–8 hours, or until doubled, light, and airy.
5. Cold proof or bake – Either cold re**rd overnight for deeper flavor, or bake the same day in a well-oiled pan.
6. Shape & oil – Gently press the dough into the pan, drizzle generously with olive oil, and dimple the surface with your fingertips.
7. Bake – Bake at 425°F (220°C) for 15–20 minutes, until puffed and golden brown.

🤎My Viral Chocolate Cake Recipe:
Dry Ingredients
• 1 ½ cups flour
• 1 ¾ cups sugar
• ¾ cup cocoa powder
• 2 tsp baking soda
• 1 tsp baking powder
• 1 tsp salt

Wet Ingredients
• ½ cup neutral oil
• 2 eggs
• 2 tsp vanilla extract
• ¼ cup chocolate sourdough discard (linked on our profile)
• ¼ cup sour cream
• ¾ cup buttermilk
• 1 cup hot coffee

CHOCOLATE BUTTERCREAM
• 1 ¼ cups softened butter
• 3 cups powdered sugar
• ¾ cup cocoa powder
• ½ cup heavy cream
• 1 tsp vanilla extract
• ¼ tsp salt

INSTRUCTIONS
1. Preheat oven to 350°F.
2. Line a half sheet pan with parchment paper and lightly spray with nonstick spray.
3. In a small bowl, whisk together all dry ingredients.
4. In a large bowl, mix all wet ingredients until smooth.
5. Add dry ingredients to the wet and whisk until just combined.
6. Carefully pour in the hot coffee and mix slowly until batter is smooth and uniform.
7. Pour into prepared pan and bake 12–18 minutes, or until the cake springs back when gently touched or a toothpick comes out clean.
8. While the cake bakes and cools, prepare the buttercream by mixing all ingredients in a stand mixer (or use a hand mixer or whisk) until light and fluffy.
9. Once the cake is fully cooled, spread with chocolate buttercream.

Serve as a single-layer sheet cake or stack for a layered version!

🍞Rise Of The Sourdough Starters! Day 8 & Beyond:

After the first week of building, continue to feed 1:1:1, starter, flour, water-for at least 2 weeks.

If at 2 weeks your starter is active and thriving, it’s time to up her food intake. Start small, with my viral ratio of 1:3:2, starter, flour & water to build up additional strength as is continues to mature.

Feed daily, keeping on the counter, and after a month of solid activity you can rest a bit-as you won’t have to feed her constantly anymore. 2-4 times weekly is best for a starter that is still maturing, and sleeping in the fridge in between feeding and baking.

Even after the starter is ready to bake with (minimum 7 days for the good bacteria to take over and thrive), it may still be some time before you get loaves with great rise-and it’s normal in the beginning for your loaves to be slightly gummy; this is due to the starter simply not being quite strong enough yet. With patience, regular feedings & time, she will thrive!

🍁Cheesecake Stuffed Pumpkin Muffins 🍂🧁
with cinnamon crumb topping + maple glaze

Wet Ingredients
• ¾ cup melted brown butter (or regular)
• 1 cup brown sugar or maple syrup
• 1 ½ cups pumpkin purée
• 2 large eggs
• 1 ½ cups sourdough discard (active or regular)
• 1 tsp vanilla

Dry Ingredients
• 2 ¼ cups all-purpose flour
• 1 tsp baking soda
• 2 tsp baking powder
• 1 tsp salt
• 2 tsp cinnamon
• 1 ¼ tsp clove
• 1 ¼ tsp nutmeg

Cream Cheese Filling
• 8 oz cream cheese, softened
• 1 egg
• ½ cup sugar
• 1 tsp vanilla

Crumb Topping
• ½ cup brown sugar
• ½ cup oats
• ¼ cup flour
• 5 Tbsp cold butter
• 1 tsp cinnamon
• Pinch of nutmeg & clove
(pulse or mix by hand — add a drizzle of maple if you like)

Maple Glaze
• ¼ cup powdered sugar
• 1 Tbsp maple syrup
• 1 Tbsp melted butter

Directions
1. Preheat oven to 350°F. Grease or line a muffin tin.
2. Beat butter + sugar until creamy. Add eggs, vanilla, pumpkin & starter.
3. Whisk dry ingredients, then fold into wet (don’t overmix).

Optional Overnight Ferment: Cover batter and rest in the fridge overnight for deeper flavor. Stir in baking soda + baking powder just before baking.
4. Make filling: Beat cream cheese, egg, sugar & vanilla until smooth. Transfer to a piping bag.
5. Fill muffin wells halfway with batter. Pipe ~1 Tbsp cream cheese filling into the center, then cover with more batter (about ¼ cup total per muffin).
6. Sprinkle with crumb topping.
7. Bake 25 min, until muffins are set and a toothpick (avoiding the cream cheese center) comes out clean.
8. Cool slightly, then drizzle with maple glaze. If you need a sourdough starter, ours comes live and the info is right on our page! Happy Fall Baking!🍂🍁
