Holiday Tea Apple Cider

2 gal. apple cider
1/2 c. brown sugar
6 cinnamon sticks
4 tsp. whole allspice
4 tsp. whole clove
orange wedges

Heat apple cider and add brown sugar. Tie the cinnamon sticks, allspice and cloves in a cheese cloth. Add to cider mixture. Add orange wedges and simmer for 10 minutes.

Spiced Pumpkin Roll
3 eggs
3/4 c. sugar
1 tsp. lemon juice
2/3 c. pumpkin
3/4 c. flour
1 tsp. baking powder
1 tsp. ginger
2 tsp. cinnamon
1/4 tsp. nutmeg
1/2 tsp. salt

Filling
8 oz. cream cheese
1 c. powdered sugar
4 T. margarine
1/2 tsp. vanilla

Beat eggs on high for 5 minutes, beat in sugar and lemon juice. Add pumpkin to mixture. In separate bowl mix flour, baking powder and spices. Fold into egg mixture. Spread on 15" x 10" pan. Bake at 375 degrees for 10–15 minutes. Watch carefully as it burns easily. Turn onto towel covered with powdered sugar, roll up and cool. When cool unroll and spread with filling. Prepare filling by beating cream cheese, powdered sugar, margarine and vanilla until smooth. Spread on cake and re-roll. Chill. Serves 8.
