My mom taught me to find good deals! So I’m sharing my favorite meal that is a great deal using pork tenderloin- it’s a lean protein meat that is easy to cook.

🍅 Tomato Parmesan Stuffed Pork Tenderloin

Ingredients:
• 1 pork tenderloin
• Olive oil
• Salt
• Paprika
• Garlic powder
• Dried basil
• Fresh parsley, chopped
• ½ cup canned tomatoes
• ½ cup grated Parmesan cheese

Directions:

1. Preheat oven to 350°F.
2. Carefully cut the pork tenderloin lengthwise and open it up so you have a flatter piece of pork that can be filled and rolled.
3. Drizzle the inside with olive oil and season with salt, paprika, garlic powder and dried basil.
4. Add the chopped fresh parsley, canned tomatoes and Parmesan.
5. Roll the pork tenderloin back up and place seam-side down in a glass baking dish.
6. Drizzle the top with a little olive oil and season with paprika and salt.
7. Cover with foil and bake for 40 minutes.
8. Remove the foil and bake for another 15–20 minutes, or until the pork reaches an internal temperature of 145°F.
9. Let it rest for a few minutes before slicing and serving.

🌡️ Food safety tip: For whole cuts of pork, cook to a minimum internal temperature of 145°F, then allow the meat to rest for at least 3 minutes before slicing.
