🎃 Chocolate Chip Pumpkin Bread | Fall Series Part 22 🍂

This chocolate chip pumpkin bread is SO soft and moist — and there’s no oil! I use unsweetened applesauce instead, and it turns out perfectly every time. Save this easy pumpkin bread recipe for your fall baking! 🍂

Ingredients:
1 ⅔ cups all-purpose flour
1 ½ cups granulated sugar
1 cup pumpkin purée
½ cup unsweetened applesauce
2 large eggs
⅓ cup water
1 tsp vanilla extract
1 tsp baking soda
¼ tsp baking powder
¾ tsp salt
1 tsp cinnamon
½ tsp nutmeg
¼ tsp cloves
1/2 cup semi-sweet chocolate chips + extra for topping

🎃 Chocolate Chip Pumpkin Bread Instructions

1. Preheat your oven to 350°F. Grease a 9×5-inch loaf pan or line it with parchment paper. I like parchment because you can lift the finished loaf right out.

2. In your large ghost bowl, add 1 cup pumpkin purée, ½ cup unsweetened applesauce, 2 eggs, 1½ cups sugar, ⅓ cup water, and 1 teaspoon vanilla. Whisk until everything is smooth and evenly combined.

3. In a separate bowl, whisk together 1⅔ cups flour, 1 teaspoon baking soda, ¼ teaspoon baking powder, ¾ teaspoon salt, 1 teaspoon cinnamon, ½ teaspoon nutmeg, and ¼ teaspoon cloves.

4. Add the dry ingredients to the wet ingredients. Gently fold them together with a spatula. Stop as soon as you no longer see streaks of flour. Don’t overmix—that’s important for a tender loaf.

5. Add 1/2 cup semi-sweet chocolate chips and gently fold them into the batter. Save a small handful of extra chips for the top.

6. Pour the batter into your prepared loaf pan and smooth the top. Make sure not to overfill the loaf pan. Only fill it 2/3 of the way full. Sprinkle those extra chocolate chips generously over the top. This will make the finished loaf look much better on camera. 🍫

7. Bake at 350°F for 55–65 minutes. Start checking around 50–55 minutes. Insert a toothpick into an area without a chocolate chip. You want it to come out with a few moist crumbs but no wet batter.

8. Let the bread cool in the pan for about 10–15 minutes, then lift it out and let it continue cooling. For the prettiest video slice, don’t cut it immediately out of the oven—it can fall apart while piping hot.

* 1 packet Kinder’s Au Jus Gravy Mix
* ½ cup beef broth

* ½ teaspoon garlic powder
* ½ teaspoon black pepper

INGREDIENTS

• 1 tbsp olive oil
• ½ cup finely diced onion
• 3 garlic cloves, minced
• 1 lb ground beef
• 2 tsp Italian seasoning, divided
• 1½–2 jars marinara sauce
• 1 lb spaghetti
• Salt for pasta water
• 8 oz cream cheese, softened
• 1 cup ricotta cheese
• 1 tsp garlic powder
• 2 cups freshly grated mozzarella
• 6 large cooked meatballs

• Black olives, cut into small pieces for the eyes 👀

DIRECTIONS

1. Heat olive oil over medium heat. Add the onion and garlic and sauté for a few minutes.

3. Stir about 1 jar of marinara into the beef. Add a little more if needed and set aside.
4. Cook spaghetti according to package directions. Drain and return to the pot. Stir in ½ jar of marinara. If you like your spaghetti extra saucy, add additional marinara as needed.
