Mini Chinese sponge cakes

Ingredients
- 1 cup all-purpose flour
- 1/4 cup custard powder
- 1 tsp baking powder
- 1/2 tsp baking soda
- 4 large eggs
- 3/4 cup granulated sugar
- 1/4 cup milk
- 1/4 cup vegetable oil
- 1 tsp vanilla extract

Instructions
Ensure you have mini cake molds or cupcake liners ready.

In a bowl, sift together the flour, custard powder, baking powder, and baking soda. Set aside.

In a large bowl, beat the eggs with the granulated sugar until light and fluffy, about 5-7 minutes.

Mix in the milk, vegetable oil, and vanilla extract.

Gradually add the dry ingredients to the wet ingredients, folding gently until just combined. Do not overmix.

Divide the batter evenly among the mini cake molds or cupcake liners, filling each about 2/3 full.

Place the molds in the oven and bake over medium-high heat for about 12-15 minutes, or until a toothpick inserted into the center comes out clean.

Remove the mini cakes from the oven and let them cool slightly before serving.

Cold Couscous Salad with Roasted Veggies and Feta

Ingredients:

1 cup couscous

1 ¼ cups boiling water

1 zucchini, chopped

1 red bell pepper, chopped

1 red onion, sliced

1 cup cherry tomatoes, halved

2 tablespoons olive oil

½ teaspoon salt

½ teaspoon black pepper

½ teaspoon dried oregano

½ cup crumbled feta cheese

2 tablespoons fresh parsley, chopped

Juice of ½ lemon

Directions:

Preheat oven to 425°F (220°C). Toss zucchini, red bell pepper, red onion, and cherry tomatoes with olive oil, salt, pepper, and oregano. Spread on a baking sheet and roast for 20–25 minutes until tender and slightly caramelized.

Meanwhile, place couscous in a large bowl. Pour boiling water over it, cover, and let sit for 5 minutes. Fluff with a fork.

Let roasted vegetables cool slightly, then add to the couscous. Stir in feta, parsley, and lemon juice.

Toss well to combine and refrigerate for at least 30 minutes before serving.

→ Rice and vegetables
4 cups cooked rice
2 cups chicken broth
1½ cups onions and bell peppers, chopped
3 teaspoons minced garlic
3 tablespoons vegetable oil, divided

→ Seasonings and spices
1 teaspoon seafood seasoning
¼ cup all-purpose flour
1 tablespoon dried oregano
1 teaspoon dried thyme
1 tablespoon garlic powder
1 teaspoon onion powder
1 teaspoon chili powder
½ teaspoon black pepper
Salt to taste
Pinch of cayenne pepper (optional)

Directions:
