This month, Colorado Country Life teamed up with electric co-op employees from across Colorado for a virtual recipe swap focused on side dishes. ⚡️ Our first co-op recipe featured this month is a delicious roasted potato salad shared by Alliy Sahagun from Gunnison County Electric Association.

This Roasted Potato Salad combines crispy oven-roasted potatoes, garlic, corn, eggs, and a zesty ranch-infused dressing, making it equally delicious served warm or chilled. 🍳

What does it take to maintain a fourteener? Try altitude, teamwork, and a whole lot of grit. 🏔️

Crews from the Rocky Mountain Youth Corps and other CYCA partners spend days on peaks like Quandary and Elbert building stairs, hauling logs, and keeping trails safe for the 300,000+ hikers who visit each year. 🚶‍♂️

But their impact goes beyond trails — these programs give young people hands-on experience in conservation, leadership, and public service 💼🌿

Trail work at 12,000 feet? It’s no small feat. From hauling logs to crushing rock, volunteers and youth corps members are putting in the backbreaking work to keep Colorado’s most beloved peaks accessible. 🏔️

The Colorado Youth Corps Association and crews like Rocky Mountain Youth Corps are the force behind safer trails, wildfire mitigation, and habitat preservation across the state. Their efforts maintain over 700 miles of trails, improve thousands of acres of public lands, and create meaningful career paths for Colorado youth. 🚶‍♀️🛠️
