omodoro Pasta Sauce 🍅 I saw make Pomodoro, so I made Pomodoro.

I used these beautiful gold tomatoes, but feel free to use any type or color you like!��Here’s how to make it:��3/4 lb angel hair pasta (plus reserved pasta water)�Good olive oil�4 cloves garlic, to taste (use smaller cloves)�20 oz tomatoes�Fresh basil, torn (about 10 leaves)�Salt, to taste�Red pepper, to taste�Butter, to taste (about 3 tbsp)�Parmesan cheese, to garnish��1. Bring a pot of salted water to a boil�2. In a saucepan, heat about 2-3 tbsp olive oil over medium/low heat. Add in your garlic cloves to infuse. �2. Once your garlic begins to sizzle, pour in your tomatoes. Add in a pinch of salt, red pepper, and half of your torn basil. Stir, reduce heat to low, cover, and simmer for 5-10 minutes.�3. While your tomatoes are simmering, add your angel hair to your now boiling water. Stir to make sure it doesn’t stick together. Cook until al dente.�4. Remove the garlic from your tomatoes, and crush with a knife until they become a paste. Add back to your tomato sauce and stir. �5. Add in a splash (about 1/2 cup) pasta water followed by a few k***s of butter. Stir and add your al dente angel hair directly to the sauce. Stir continuously and let simmer for a minute. �6. Throw in another k**b of butter for good measure and the rest of your basil. Stir until the sauce is nice and silky. �7. Serve with another drizzle of olive oil, fresh parmesan, and red pepper. Enjoy!

The best banana bread recipe 🍌

These are the main reasons why this will be the best banana bread you’ve ever had: we’re using brown butter, we’re using brown sugar (bonus reason), we’re using crème fraîche, and we’re toasting our nuts!

Here’s how to make it:

3 overripe bananas (mashed)
1/2 cup unsalted butter, browned
3/4 cup packed brown sugar
2 large eggs
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 cup creme fraiche
1/2 cup chopped walnuts, toasted
1/2 cup chocolate chips, optional (if you skip the chocolate chips, add another 1/4 cup brown sugar)

1. Preheat oven to 350F. Grease a loaf pan and line with a layer of parchment paper along the bottom.

2. In a small stainless pot or pan (preferably pan), melt your butter over medium heat. Once the butter has fully melted and it begins to foam, keep stirring, continuously. After a few minutes your butter (and milk solids) will be nice and golden brown. You don’t want it too dark, so keep an eye. It can go from perfect to burnt very quickly. Remove from heat, add to a small bowl, and set aside.

3. In a large mixing bowl, mash your bananas until smooth. Stir in your brown butter until fully combined.

4. Add in your eggs, sugar, and vanilla. Mix well.

5. In a separate bowl, whisk together your flour, baking soda, salt, and cinnamon.

6. Gradually add your dry ingredients to your wet ingredients, stirring until just combined. Careful not to over mix.

7. Fold in your creme fraiche followed by your chocolate chips and toasted walnuts.

8. Pour your batter into your greased loaf pan. Spread it evenly and top with extra chocolate chips, if desired.

9. Bake for 60-70 minutes, or until a toothpick comes out clean and it has a beautiful golden crust. You can cover the bread with foil during the last 15-20 minutes if you notice it getting too dark.

10. Remove from oven and let it sit in the pan for 10 minutes, then remove from the pan, and allow to cool completely on a wire rack (about 2 hours). Slice and enjoy!

Copycat Carbone Spicy Vodka Pasta ❤️‍🔥 Don’t spend $34 on this, make it at home and arguably even better. Here’s how:

- 1 lb shellbows (I use ) and 1 cup reserved pasta water
- 2-3 tbsp unsalted butter
- 1/2 T olive oil (I use rosemary)
- 1/2 yellow onion (~ 1 cup) diced
- 1 tsp red pepper flakes OR Calabrian chili peppers, to taste
- 3-4 cloves garlic, grated
- 4.5 oz tomato paste
- 1/2 cup vodka (I use )
- 1 cup cream
- Salt, to taste
- Freshly grated parmesan cheese, to taste (about 1 cup plus more for garnish)
- Freshly torn basil, to taste (5-10 leaves)

1. Boil your pasta in salted water until aldente. Reserve pasta water (1 - 1.5 cups). Drain and set aside. If your noodles stick together after sitting, pour in pasta water and toss.

2. In a large sauce pan, heat your olive oil and 1 T butter over medium/low heat.

3. Add in your onion followed by a pinch of salt and your chili flakes or Calabrian peppers. Sauté for a few minutes.

4. Grate in your garlic and stir. Cook for 30 seconds.

5. Make a small center in the middle of your pan. Add in your tomato paste and let it cook off in the pan before incorporating with the rest. About 2-3 minutes.

6. Incorporate your tomato paste with your onion and garlic, and let that cook for another minute or two.

7. Pour in your vodka, stir, and let that simmer for a few minutes to allow the alcohol to cook off.

8. Reduce hear to low. Pour in your cream and stir. Season with salt, to taste.

9. Add in another touch of butter and a splash of pasta water. Stir.

10. Pour in your pasta followed by a heavy hand of parmesan cheese, more butter, and more pasta water. Stir. Continue adding more pasta water and/or butter until you get a silky sauce that clings to the pasta.

11. Finish with your freshly torn basil, stir, and serve with extra parmesan cheese and chili flakes, optional. Enjoy!

Tuscan White Bean & Sausage Soup ❤️‍🔥

1 lb Italian sausage (or preferred protein)
1 medium onion, finely diced
2 medium carrots, finely diced
2 celery stalks, finely diced diced
2 tsp Italian seasoning�1 tsp calabrian chili (optional)
6 garlic cloves, minced (to taste)
1 tbsp fresh thyme, chopped
1 tbsp fresh rosemary, chopped
3 tbsp tomato paste
1/2 cup dry white wine (optional)
4 cups low-sodium chicken broth
2 (15 oz) cans cannellini or Great Northern beans, drained and rinsed
Parmesan rind (optional)
Bay leaf
1/2 cup sun-dried tomatoes (julienned, packed in oil)
Freshly grated parmesan (about 1 cup)
1/2 cup half and half or cream
2-3 cups fresh spinach or kale
Lemon juice, to garnish
Crusty bread to dip

1. In a large pot, heat about 1 tbsp of sun-dried tomato oil over medium heat. Sauté the diced onion, celery, and carrot with salt, pepper, Italian seasoning, and calabrian chili for a few minutes.
2. Clear a center in the pot and add your preferred protein. Allow a crust to form, then flip and break up with a wooden spoon. Cook through and combine with the veggies.
3. Add the thyme, rosemary, and minced garlic. Stir and cook for another minute.
4. Clear a center in the pot again and add the tomato paste. Let it cook in the pan for 1-2 minutes before stirring with the rest of the ingredients. Stir and cook for another minute or two.
5. Deglaze with white wine, scraping up any brown bits on the bottom. Let it simmer for 1-2 minutes.
6. Pour in the beans and chicken broth, and season with salt and pepper to taste. Bring to a boil, then reduce heat to low.
7. Add in the parmesan rind and bay leaf. Cover and simmer for 20 minutes.
8. After 20 minutes, discard the bay leaf and parmesan rind (if you can find it) and finish with the sun-dried tomatoes, parmesan cheese, half-and-half, and spinach. Stir until the spinach is wilted.
9. Serve and top with more parmesan, lemon juice, and black pepper. Enjoy with crusty bread!

Baked Ziti ❤️‍🔥 Ingredients below, full recipe in my bio! (too long for the caption)

For the Marinara:
1/4 cup olive oil
6-8 garlic cloves, sliced
1 tsp Calabrian chili paste
Handful of fresh basil
1 can (28 oz) San Marzano whole tomatoes, crushed by hand
Salt and pepper, to taste

For the Pasta:
1 lb ziti pasta, cooked to al dente

For the Meat Mixture:
2 tbsp olive oil
1 medium onion, diced
Salt and pepper, to taste
1 - 2 tbsp Italian-O’s
1 tsp Calabrian chili paste
1 lb ground beef
3 tbsp tomato paste
½ cup dry white wine (optional)

For the Cheese Mixture:
15 oz ricotta cheese
4 oz (1 cup) shredded mozzarella cheese
½ - 1 cup grated Parmesan cheese
1 tsp Italian-O’s
Salt and pepper, to taste
Pinch of nutmeg
1/4 cup fresh parsley, chopped
1 large egg

For Assembly:
6 oz (1.5 cups) Mozzarella cheese
4 oz - 6 oz (1 - 1.5 cups) parmesan cheese

Creamy Mushroom Pastina 🤩 This was divine. Here’s how to make it:

2 tbsp butter
Olive oil
4-6 oz mushrooms, diced (to taste)
Salt and black pepper, to taste
1/2 shallot, finely diced
Splash of white wine (optional)
1 cup acini de pepe
3 cups chicken broth
2 cloves garlic, grated (to taste)
2-3 tbsp cream
1/2 - 1 cup freshly grated parmesan (to taste)
Juice from 1/2 lemon (to taste)

1. Heat a touch of olive oil and butter in a sauce pan over medium heat. Add the mushrooms and cook until browned, seasoning with salt and pepper at the end. Remove from the pan and set aside.

2. In the same pan, add a touch of butter and sauté the shallot with a pinch of salt and pepper until softened. Deglaze the pan with a splash of white wine, scraping up any browned bits.

3. Pour in the acini di pepe and toast it lightly in the pan for a 2-3 minutes. Then, pour in the chicken broth, season with salt and pepper, and add another touch of butter. Bring to a light boil, then reduce to a simmer.

4. Simmer for about 10 minutes on low heat, stirring occasionally, until most of the liquid is absorbed and the pasta is tender.

5. Stir in the remaining butter, grated garlic, parmesan cheese, cream, and cooked mushrooms. Let simmer for another minute or two before finishing with lemon juice. Adjust for seasonings, if needed.

6. Finish with extra parmesan cheese, black pepper, a drizzle of high-quality olive oil, and lemon zest. Enjoy!

Note: “a touch of butter” is about 1/2 tbsp
