This was a doozy!
I ended up with 2 big gallon freezer bags full! I let them ripen on the counter for about 2 weeks. And slowly added them to the freezer bag as they yellowed.
I’m unsure what I’ll do with them quite yet. I thought about a jam, or an easy stove top sauce… it would be sweeter than the norm. But yummy nonetheless.
