Happy Thanksgiving, friends.

As I’m in the kitchen today, moving between dishes and getting things ready for my family, I keep thinking about how Sol Table began with a simple hope to nourish women and families with prayed-over food.

This little business of mine has carried me from Denton, Corinth, and Lake Dallas to my new home in Coppell, and every single order, message, and “Kandi, this helped me,” has meant more than you know.

Thank you for welcoming my hand-blended teas, elderberry syrups, granolas, and meals into your homes. Thank you for supporting a small, woman-owned business that is still finding its footing in a new city. Thank you for letting me pray over your food. I never take that lightly.

Whether your table is loud or quiet today, full house or small gathering, I pray you feel nourished, seen, and held.

If you are trying to find your footing with God again, I know that feeling.

I forget things that help me.
I forget things that make me breathe a little easier.
And then when I finally remember, I think…why did I ever stop doing this?

One of those things is so simple.
Before I walk into a room, I pause

Then I picture Jesus stepping in first.
You go ahead, Lord. I will come right behind You… Almost like I open the door and motion Him in.

It brings me that peace, you know.
That little shift inside I forget I need.

And it works anywhere at all.
Doctor’s office. Hospital room. A hard talk you really do not want to have.
Even walking into your kitchen in the morning.

Let Him go in first.
Let Him be the calm before you step in.

You can let Him be your cleaning partner.

If I am dusting, I will say, thank You for what is here.
If I am wiping the mirror, I will say, help me see myself the way You see me.
If I am making the bed, I will say, let this be a peaceful place tonight.

Nothing difficult or intimidating.
Nothing deep.
Just letting God into the real parts of my life.

It is basically opening the door and saying,
Come on in. You are welcome here.

ROUND ONE IS DONE
(A quick follow up to the broth I shared earlier today.)

Here is the after. This is round one, my chicken stock, and look at that golden brown color. Rich, clean, and completely homemade.

What I ended up with:
• Five and a half containers
• All 32 ounces
• Freezer friendly
• I will label them with today’s date and tuck them into the freezer

How you can use this rich batch:
• Chicken noodle soup
• Chicken and dumplings
• Cozy leftover turkey soups
• Homemade gravy, mixed with your turkey drippings
• Chili bases
• Beans, soaked or simmered
• Mashed potatoes for extra flavor
• Sipping broth when you are not feeling well
• Any dish that needs a fuller, richer, golden flavor

Why this is worth the work:
• Your whole house smells amazing
• One good carton of stock is at least five dollars
• You know every single ingredient
• Nothing goes to waste

A little note on apple cider vinegar:
• I always add a splash
• It helps pull minerals from the bones
• Supports digestion
• Adds extra nourishment
• Paired with onion and garlic skins, it creates a deeply mineral rich base

HOW TO MAKE THE MOST OF YOUR CHICKEN CARCASS
(A simple Sol Table kitchen tip.)

You do not have to use your chicken carcass right away. I usually just seal mine up and pop it in the freezer. I also keep a big zip bag in there for vegetable scraps. Any time I am chopping onions, garlic, bell peppers, carrots, celery, or even tomatoes, the little leftover pieces go straight into that bag. It adds up fast, and those scraps make the best stock.

When your bag is full, put everything into your pressure cooker or a big pot. Add the chicken carcass, the frozen scraps, a splash of apple cider vinegar, a few peppercorns, and a bay leaf if you have one. If you have herbs that need to be used up, toss those in too.

A quick note about the onion and garlic skins:
Do not worry about peeling them off. The skins are full of antioxidants and minerals, and they give your stock a deeper color and richer flavor. They all get strained out later anyway.

I cook my first batch in the Instant Pot for three hours. After straining, I label that one chicken stock. Then I put the bones and scraps back in, cover with water again, and cook for two more hours. That becomes my chicken broth, a lighter, softer version.

If I want to stretch it, I do a third cooking for about an hour. That batch is what I call my flavor broth, and it is perfect for cooking rice, pasta, quinoa, anything like that. It gives your grains the prettiest, savory base without any extra work.

If you want a sipping broth, you can add turmeric root or ginger root too.

Optional note:
After three long cookings, the bones will be very soft and brittle. Some people choose to research whether a tiny bit of fully cooked, crushed bones can be used for pets. If you ever look into that, just research carefully and avoid anything with onion or garlic. Totally optional.

And you can do this exact same thing with your turkey carcass after Thanksgiving. Even the bones from a turkey breast make a beautiful pot of broth.

Such an easy, nourishing way to use what you have and let nothing go to waste.

A Soulful Start

I love mornings. Not every one goes the same, but I try to make them meaningful.

Sometimes I lay beside my husband a little longer and let him hold me before the next alarm sounds. Other days, I head straight for the shower and pray while I dry brush and get ready. He brings me warm lemon water as soon as he hears the shower turn off, and later he starts the kettle for my tea.

I sit at my vanity with my warm lemon water, put on a bit of makeup, and dab my handmade perfume behind my ears, on my collarbone, wrists, shoulders, and the back of my neck. It is one of those small rituals that helps me feel feminine and grounded.

We always sit together for a few minutes, reading our devotionals or the Bible app. Sometimes we talk about it, sometimes we just sit quietly. Penny Jo is usually right there with us.

Before he showers, I set out his towel and a little toothpaste on his brush. And when he is done, I warm up his coffee mug and bring it to him. These small gestures make life softer and more intentional, for both of us.

That is really what I love about mornings. They remind me that presence lives in the smallest acts.

One year ago today…

These little stickers, thank you cards, and that mug with my Sol Table logo arrived in the mail, the first tangible pieces of something God had quietly been growing in me.

Before Sol Table, there was Dancing Oaks Acre. That name was known in my Denton community for years. Women came to my front door to pick up foods and teas, jars of elderberry, bags of granola, and beautiful seasonal meals. That door saw stories, prayers, and kindness shared on front porches. But that chapter came to a close. I no longer lived beneath those oak trees, and that door no longer served its purpose.

Out of that space, Sol Table was born. It grew from sunshine, from new life, from growth within me. I began to understand that I was chosen, just as every woman is, and that only God can bring the light back when we think it’s gone. Around the table, beautiful things happen, and sometimes heartbreaking things too. The table represents life itself, the breaking, the mending, the nourishment, the gathering.

It’s been a slower start this time, and that’s okay. My new community here in Coppell doesn’t yet know who I am or what Sol Table is. But it isn’t going to die, because it came from such a good place. God’s been asking me to pause, to let the roots take hold, and now He’s gently saying, it’s time.

This Saturday, I get to open my doors again, not for sales, not for business, but simply to love on women. No agenda, no pitch. Just a place to show the heart of Sol Table, a place where women can show up as they are, feel safe, and be filled by what only God and other women can do.

Here’s to slow beginnings, new roots, and a faithful God who always knows the timing.
