π Grilled Chicken Breast with Creamy Herb Sauce, Roasted Potatoes, Mushrooms & Baked Tomatoes

π Ingredients
For the Chicken:
2 chicken breasts
1 tbsp olive oil
1 tsp paprika (sweet)
Β½ tsp garlic powder
Salt & pepper
Fresh parsley (for garnish)
For the Roasted Potatoes:
300 g baby potatoes
1 tbsp olive oil
Β½ tsp rosemary (fresh or dried)
Salt & pepper
For the SautΓ©ed Mushrooms:
150 g mushrooms, sliced
1 small shallot or onion, finely chopped
1 tsp butter
Salt & pepper
For the Roasted Tomatoes:
8β10 cherry tomatoes on the vine
A drizzle of olive oil
Pinch of sea salt
For the Creamy Herb Sauce:
1 tsp butter
1 tsp flour
150 ml cream
1 tsp mustard or cream cheese (optional)
1 tsp chopped spinach or herbs (e.g. parsley, chives, dill)
Salt, pepper, nutmeg to taste
π¨βπ³ Instructions
Marinate chicken: Rub with oil, paprika, garlic powder, salt & pepper.
Prep potatoes: Halve them, toss with oil, rosemary, salt & pepper. Roast at 200 Β°C (390 Β°F) for 25β30 minutes.
Tomatoes: Add to the oven with a bit of oil and salt and roast alongside the potatoes.
Cook chicken: Grill or pan-sear for about 5β7 minutes per side until golden and fully cooked.
SautΓ© mushrooms: In butter with onion for about 5β6 minutes until browned.
Make sauce: Melt butter, stir in flour, slowly add cream. Add mustard/herbs, season, and simmer 3β4 minutes until thickened.
Assemble: Plate everything in a bowl or on a plate, drizzle chicken with sauce, garnish with parsley.
