I wasn't really into cauliflower rice at first. I gave it many chances until I discovered I don't like the pasty texture. So I've experimented and found that bigger grain works for me. I use my food grinder/processor to reach the perfect size.
First, I cut cauliflower into bite-size pieces. I rinse them, dry them for 30 minutes in a clean towel and use the pulse button until I reach my preferred grain size.
Put it to the test. You might like it . It is low in carbs.
