This was dinner last night 🍞🥣 I’ve been on a soup kick lately and decided to try making my own bread bowl to go with it 😆
Broccoli cheddar soup it is! I looked through so many recipes — they all seem alike, but everyone has their own little twist. So I just used whatever I had on hand (basically the essentials) and skipped a few spices I’m not a fan of 😅 ahem, nutmeg.

And in true Filipino fashion, my kids wanted to eat the bacon with rice and soup on the side 😅 We also had egg with tomatoes and onions (not in the photo) — something we usually make for breakfast — so it kinda turned into a little breakfast for dinner moment 🥰

Back-to-school season is slowly winding down 🍂✏️ and I realized I actually managed to snap a few photos of the girls’ lunch & snack boxes. Most mornings I’m just in “pack & go” mode 😅 (chaos is real), so pictures don’t usually happen. But I wanted to share some of our go-to’s in case you’re looking for EASY, realistic lunchbox ideas (in no particular prder) 👇

On repeat lately:
🍕 Pizza toasts – bread + sauce (tomato paste + Italian seasoning, leftover pasta sauce, or pizza sauce whatever works) + toppings like pepperoni, cheese, fresh basil, or even ready made BBQ sauce + rotisserie chicken, chopped onions etc

🍞 French toast – Rue’s fave, coated in cinnamon sugar or brushed with a little maple syrup

🥪 Sandwiches – Riri loves fried egg, BLT, or ham & cheese…the savory ones! Rue only asks for her little chocolate or pb sandwich bites 😂

🧁 Muffins/quick breads – banana, oat, spinach… always a win

🧇 Waffles – I keep frozen ones on hand for busy mornings, or make a batch over the weekend

🍎 Fruits (lots of them)
🥒 Cucumbers – pretty much the only veggie she’ll eat in a packed lunch
🥨 Packaged snacks – pretzels, crackers, veggie sticks, string cheese, fruit pouches

If the first week is a preview of the month, we’re in for a good one. 🤞🏼✨

1 – kicked things off with cocktail hour + an amazing dinner with ✨
2 – more snaps because…how could I not? 🌿
3 – garden-fresh magic by chef 🍴
4 – supporting daddy at the sectionals… mostly by walking Graham and skipping the matches 😂
5 – kept refreshed with 🍹
6 – HE MADE IT TO NATIONALS!!! 🎉 (cue proud wife mode)
7 – added more plant babies to the fam 🪴
8 – baked my first-ever sourdough… starter is still nameless 😅
9 – mini back-to-school shopping with the girls 🛍️
10 – thriving!! 🌱
11 – mentally prepping for double lunch-packing duty this week 🥪
12 – no caption, just ending on a happy note 🥰

We’re all about breakfast over here, especially when it’s something we can share with our littles! These Mini Pumpkin Banana Pancake Bites are a staple in our house. I can’t take credit for this genius idea, but it’s been a winner for us since the early baby-led weaning days and is still going strong! Plus, they’re totally customizable—flavor options are endless, so they never get old. It’s definitely part of our breakfast rotation!

Recipe for these Pumpkin Banana Pancake Bites is below—save it for an easy breakfast hit! 🍌🎃

PUMPKIN BANANA PANCAKE BITES RECIPE 🥞

Ingredients:
• 1 banana, sliced
• 1 cup flour
• 1/2 cup milk
• 1 egg
• 2 tbsp melted butter
• 1 tsp baking powder
• 1/2 cup pumpkin puree
• 1 tsp cinnamon
• Optional: 1 tsp super-seed booster (chia, flax, etc.)

Method:
1. Combine dry ingredients in a bowl.
2. Mix in egg, melted butter, milk, and pumpkin puree until smooth.
3. Dip banana slices in batter, then cook in a buttered pan until golden on both sides.

Serve warm and enjoy with your little ones! 🥰

Time-Saving Tip: You can also use boxed pancake mix and just add pumpkin puree for a quick twist! 😍

Breakfast today: Honey vanilla oatmeal, Tuna melt waffles, Blueberries 🧇🧀🥣🫐

Golden, crispy, and packed with flavor—this Tuna Melt Waffles’ a family favorite for a reason! Perfectly seasoned tuna, melty cheese, and a hint of crunch from celery come together in waffle form for the ultimate comfort bite. Whether it’s a breakfast, quick lunch or a snack for the littles, this recipe has been loved by so many of you when I first posted this 2 years ago, so I’m sharing it again 🥰

Tip: Swap sweet relish for a touch of lemon juice; if you don’t have sweet relish, this will balance all the flavors together. Who’s ready to dig in? 😍🧇 Recipe below

Recipe:
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Ingredients:
• 5 oz canned light tuna, drained
• 1/4 of a celery stick, minced
• Italian parsley, minced
• 1 & 1/2 cups shredded cheese of choice (I used Monterey jack cheese for this batch)
• 1 egg
• 1 tbsp mayonnaise (or full fat Greek yogurt)
• 1 tbsp sweet relish (or 1/2 tsp lemon juice for a zesty alternative)
• 1/4 cup flour of choice (I used chickpea flour)
• 1/4 tsp each: garlic powder, onion powder, ground black pepper
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Method:
1. Drain water from the canned tuna.
2. In a large bowl, combine all ingredients and mix until well combined.
3. Heat up a waffle maker and grease with unsalted butter or oil spray.
4. Scoop a heaping tablespoon of the tuna mixture onto the waffle maker and cook for 2–3 minutes, or until golden and crispy.
5. Let cool before serving to littles and enjoy!

I just want to share how much we absolutely love these books from ! (definitely not an ad 😅) They recently expanded their collection with two new books. The series, “A Very Asian Guide to…”, explores different cuisines like Filipino, Indian, Vietnamese, and now the newest releases—Japanese & Malaysian and Singaporean! (There’s also a Korean one we’re hoping to add to our collection soon.)

As someone who’s loved cooking since I was a kid, I would have been over the moon to have something like this growing up. Sharing these stories of Asian cuisines with my own kids is so special. Each book is filled with recipes and traditions from different cultures, making it such a fun, vibrant way for kids to explore food and heritage. As a foodie, I find them amazing, and my kids are just as obsessed!

1. Stir-fried ramen with chicken and broccoli. I used dry ramen noodles without the sauce packet, only cooked with a few drops of low-sodium soy sauce. Served with washed kimchi (to remove the spice or just used store-bought white kimchi), banana slices, and cheese.
⠀⠀⠀⠀⠀⠀⠀⠀⠀
2. Deconstructed beef salpicao, buttery and garlicky pasta, oats-coated potato croquette (cutouts), and blueberries.
⠀⠀⠀⠀⠀⠀⠀⠀⠀
3. Baked rotisserie chicken (skin removed), butter-stir-fried frozen veggies, rice balls, and mangoes.
⠀⠀⠀⠀⠀⠀⠀⠀⠀
4. Shrimp and veggie fried rice, fried egg, and steamed broccoli.
⠀⠀⠀⠀⠀⠀⠀⠀⠀
5. Pork and tofu gyoza dumplings, stir-fried dry udon noodles, and mangoes.

6. Deconstructed steak tacos, cilantro lime rice, avocado, and mangoes.

These are family meals modified to be more suitable for younger kids.
