Bake at 250 for 25 ish mins, let rest for 10, seared for 1:30 on each side in a regular nonstick pan. Lighting isn’t amazing it was slightly closer to med rare than you can tell in the pic. Continuing to shoot for less grey band and a little closer to med rare.

Dry aged deer quarter ready to be broken down. I know a lot of y'all don't understand the process of true dry ageing. And that's ok but This stuff is amazing and it really does make a difference if you do in in the right settings (temp, airflow, humidity).

Alright group..need a lil advice,kinda outkicked my coverage trusting a Walmart delivery for my turkey…the initial plan was to deep fry it,but as you can see Bertha probably weighs more than the damn fryer itself…thought about spatchcock’n then throwin her on the grill and lettin that good smoke hit her but my grill is fairly small and i dont have an offset smoker so i usually have to improvise on other cooks,they usually always come out fine and on point so im definitely no rookie to the game!
but this is her time to shine and i dont wanna jack it up and i usually stick to just deep frying my turkeys…basically i got this damn Condor and wanna hear what yall might do,i have some thoughts but feel free to chime in…we’re here to all get better!!

Great deal, need help identifying
At my grocery store I noticed these three hunks of meat that were covered by strange objects for that area of the beef section.

The labels say “FRZN BAST TURKEY 16-22LB” but this would be from a turkey that was 300lbs given the size of the leg bone in these things.

I ultimately got them for $.29 per pound and 4.5lbs per hunk.

Any help is appreciated!

Breakfast sausage hack.
If you have a Wegmans near you, I implore you to pick up a tube (or ten) of their breakfast sausage, and liberally apply smoke until about 195-200 internal. You will not be disappointed. I have been doing this weekly for my work lunches and It’s been months and they have yet to bore me. My co-workers both love and hate me. I share on occasion as to not foster and resentment. People love to and I’ve always had someone pay me to make them some.

First time ever processing my own deer and dry aging - I used a salt tray in the bottom to soak up moisture - I also used a fan inside to keep air flow - and everything was on cooling racks. Aged for 6 days and I am starting to deboned and remove silver skin for grind/steaks.
