We’re back! Garden to table! Loads of eggplant, jalapeño, lime, lemongrass, Thai basil, cucumber. I made a Thai-inspired eggplant chickpea curry (linked in bio!) and it turned out so good. What else should I make with all this eggplant? Thai cuisine is the inspiration behind this dish, with deep respect for the traditions and flavors that make it so special.
