1 tbsp olive oil
½ sweet onion, finely diced
3 garlic cloves, minced
¼ cup dry white wine or vegetable stock
1 (16 oz) package frozen spinach, thawed and drained
1 (14 oz) can artichoke hearts, chopped
½ tsp red pepper flakes
8 oz cream cheese, softened
1 cup sour cream
½ cup grated Parmesan cheese
Salt and pepper to taste
1 ½ cups shredded mozzarella

✅Instructions:
Heat the olive oil in a large skillet over medium heat. Sauté the onion for 2-3 minutes until soft.
Add garlic and cook for 1 minute. Deglaze the pan with white wine.
Mix in the spinach, artichokes, and red pepper flakes, cooking until heated through, about 4 minutes.
Add cream cheese and sour cream, stirring until smooth and combined. Remove from heat.
Stir in Parmesan cheese, season with salt and pepper, and top with mozzarella.

✅Cookie Bars:

1 cup butter (softened)
1 cup sugar
2 large eggs
1 Tbsp vanilla
1/2 tsp almond extract or zest (optional)
1 tsp baking powder
1 Tbsp cornstarch
2 1/4 cups flour

✅Buttercream Frosting:
1/2 cup butter (softened)
2 tsp vanilla
1/4 cup heavy cream
2 1/4 cups powdered sugar
Sprinkles for topping

✅Steps:
Preheat oven to 350°F. Line and grease a 9x13-inch pan.
Beat butter and sugar until fluffy. Add eggs, vanilla, and optional flavorings. Mix in dry ingredients.
Spread dough in the pan. Bake 14-16 minutes. Cool completely.

2 cups (280g) graham cracker crumbs
1/3 cup (70g) sugar
1/2 tsp cinnamon
Pinch of salt
1/2 cup (110g) unsalted butter, melted

✅Cheesecake Filling:
4 (8oz) blocks full-fat cream cheese, softened
1 1/4 cups (255g) sugar
2 tbsp cornstarch
3 large eggs + 1 yolk
2 tsp vanilla bean paste
1 cup (250g) sour cream

✅Topping:
1 pint strawberries, halved or quartered
2 tbsp sugar

✅Directions:
Preheat oven to 350°F. Prepare a 9-inch springform pan with parchment paper. Press the crust mixture into the pan and bake for 10 minutes.
Beat cream cheese, sugar, and cornstarch until smooth. Gradually add eggs, vanilla, and fold in sour cream. Pour filling into the crust.
Bake at 325°F using a water bath for 70 minutes. Cool in the oven, then refrigerate overnight.
Let strawberries macerate with sugar for 30 minutes, then spoon over cheesecake before serving.

1 (16 oz) package frozen chopped spinach, thawed and squeezed dry
1 (14 oz) can artichoke hearts, drained and chopped
½ tsp crushed red pepper flakes
8 oz cream cheese, cubed
1 cup sour cream
½ cup grated Parmesan cheese
Kosher salt and black pepper to taste
1 ½ cups shredded mozzarella cheese

✅Instructions:
Heat olive oil in a large skillet over medium heat. Add diced onion and cook for 2-3 minutes until translucent.
Stir in minced garlic and cook for about 1 minute until fragrant.
Pour in white wine, scraping the skillet to deglaze and loosen any browned bits.
Add spinach, artichokes, and red pepper flakes. Stir until the mixture is warmed and any excess liquid has evaporated, about 4 minutes.
Add cream cheese and sour cream, stirring until fully melted and creamy. Remove from heat.
Stir in Parmesan cheese and season with salt and pepper to taste. Sprinkle mozzarella cheese evenly on top.
Preheat oven to broil on high. Place the skillet under the broiler, about 6 inches from the heat source, and broil for 3-5 minutes until golden and bubbly.

✅For the Crust:
2 cups chocolate wafer crumbs
½ cup unsalted butter, melted

✅For the Cheesecake Filling:
32 oz cream cheese, softened
1 ¼ cups sugar
5 large eggs, at room temperature
1 tsp vanilla extract or ¾ tsp vanilla paste
¼ cup sour cream, at room temperature
¼ cup heavy cream, at room temperature

✅For the Berry Topping:
1 ½ cups mixed berries (fresh or frozen)
3 tbsp brown sugar
1 tbsp lemon juice
3 tbsp raspberry jam

✅Instructions
✅Crust:
Preheat oven to 350°F (180°C). Line an 8x11-inch rectangular pan or a 9-inch round pan with parchment paper or foil.
Mix chocolate crumbs and melted butter until it resembles wet sand. Press into the pan's bottom and bake for 10 minutes. Cool on a rack.

✅Filling:
Beat softened cream cheese until smooth. Gradually add sugar and mix well.
Add eggs in batches, mixing gently. Stir in vanilla, sour cream, and heavy cream.
Pour the batter into the crust. Bake at 325°F (165°C) for 10 minutes, then reduce heat (see below):
For rectangular pans: Bake at 275°F (140°C) for 35-40 minutes.
✅For round pans: Bake at 300°F (150°C) for 50-55 minutes.
✅Cooling:

Turn off the oven and leave the cheesecake inside for 1 hour without opening the door.
Run a knife around the edges, cool to room temperature, and refrigerate for 8 hours or overnight.
Topping:

Cook berries, sugar, and lemon juice over low heat for 5 minutes. Stir in jam and mix well.
Spread the topping over the cheesecake and serve.
