Canned hamburger some say their meat looks nasty. I just canned 18lbs looks great to me. I use 1/2 cup tenderquick to 1 gallon water boil until done. I use a slotted spoon to fill and pack jars to neck then fill to bottom of funnel. Pressure can for 75 minutes. All sealed.

Last March, I contacted my local meat processing/butcher shop and inquired about what they do with the excess bones, and they said they just discard them in the trash. So I asked if they could save some for me and I ended up with at least 60 lbs. I pressure cooked the bones long enough to get a few lbs. of usable meat that I removed before putting them back in the pressure cooker for another 4 hours of cooking time.
I got 22 quarts of bone broth and 17 pints of pure white beef tallow.
The left-over bones are now soft enough that they will be dried, powdered, and sprinkled on my garden as bone meal.

With gardens coming on I thought you guys may want to try this recipe. It is not canned, just stored in the jars in the refrigerator. It is called Depression Era Salad. The jewish people made this during the great depression and this is one of the original recipes. I substitute cucumber slices for the green peppers as I don't like green bell pepper.
Ingredients
1 head shredded cabbage- about 2lbs.
3 carrots sliced
2 cucumbers
2 green peppers ( I use sliced cucumbers in place of peppers)
1 large red onion thinly sliced
1 buch radishes thinly sliced
1/2 bunch celery
Dressing
1 cup vegetable oil( or your preferance)
1/2 cup warm water
1 1/2 cup white vinegar
10 to 12 Tablespoons sugar
1 Tablespoon salt
1 Tablespoon garlic powder
Slice all vegetables and place in a large bowl
Mix sugar,salt, and garlic powder in bowl with warm water and stir until dissolved, add the vinegar and oil.
Pour dressing over vegetables and mix well, pack into glass jars then divide and pour any remaining dressing evenly into the jars.
The dressing is great, it is not to sweet because of the amount of vinigar. I do not substitute things for the dressing. Ejoy because this stuff sure is delicious,

Canned all of my mini potatoes with just butter and salt with no liquid for the first time and it’s to only way I will do them now. They are so good and quick.
I opened a jar a few days later put them in my cast iron with some olive oil sliced side down then made some poached eggs for over them. Delicous!!
How I pressure canned them
Washed them all as best I could. Soaked them to try and get the starch out( don’t know if I could have skipped this step for whole ones)
Placed them in jars put 1 tsp salt and 1 Tbsp butter , wiped the jars with white vinegar put the lids on then pressure canned them for 40 minutes for quarts at 10 pounds of pressure.
One of the easiest things to can.
