**Prep time:** 15 minutes
**Cook time:** 30 minutes
**Servings:** 6–8
# # # Ingredients
* 2 tablespoons olive oil
* 1 medium yellow onion, diced
* 3 medium carrots, peeled and sliced
* 3 celery stalks, diced
* 3 cloves garlic, minced
* 1 teaspoon Italian seasoning
* ½ teaspoon dried thyme
* ½ teaspoon dried basil
* ¼ teaspoon crushed red pepper flakes, optional
* 8 cups chicken broth
* 3 cups cooked shredded chicken
* 1 package (18–20 ounces) refrigerated cheese tortellini
* ½ teaspoon salt, or to taste
* ½ teaspoon black pepper, or to taste
* 2 tablespoons chopped fresh parsley
* Grated Parmesan cheese for serving, optional
# # # Directions
1. Heat the olive oil in a large Dutch oven or soup pot over medium heat.
2. Add the diced onion, carrots, and celery. Cook for **6–8 minutes**, stirring occasionally, until the vegetables begin to soften.
3. Add the minced garlic, Italian seasoning, thyme, basil, and red pepper flakes. Cook for another **30–60 seconds**, stirring constantly, until fragrant.
4. Pour in the chicken broth and bring the soup to a gentle boil.
5. Reduce the heat to medium-low, cover, and simmer for **10–12 minutes**, or until the carrots and celery are tender.
6. Stir in the shredded chicken and refrigerated tortellini.
7. Simmer according to the tortellini package directions, usually **3–5 minutes**, until the pasta is tender and the chicken is heated through. Avoid overcooking or the tortellini may become too soft.
8. Taste and season with salt and black pepper as needed. Stir in the fresh parsley just before serving.
9. Ladle the hot soup into bowls and top with grated Parmesan cheese, if desired.
Serve with warm crusty bread, garlic toast, or a simple green salad for a complete meal. 🥖
**Helpful tip:** The tortellini will continue absorbing broth as the soup sits. If you expect leftovers, cook the tortellini separately and add it to each bowl when serving.
Warm, filling, and loaded with comforting flavor—this is the kind of soup everyone will want seconds of! 😋
