Tequila and muddled watermelon shaken with hibiscus syrup, lime juice, and coconut water. The watermelon and tequila on their own taste like summer water; the hibiscus pulls it back tart and slightly bitter, and turns the whole drink from pink to magenta. Pour it for a group and don't bother explaining what is in it until someone asks. It goes fast.

I made this on a night when the temperature refused to drop below ninety and I wanted something that tasted cold before I even put it in the freezer. Green tea brewed and cooled, blended smooth with cucumber, apple mint, lime juice, and dehydrated cane juice, then churned and frozen. Clean, green, and almost savoury beneath the sweetness. I made these for a Valentine's Day dinner and they became the thing my friends request every time they come over. A mint-infused honey syrup mixed with gin, pomegranate juice, and fresh lime, poured over whole raspberries and pomegranate seeds in a coupe glass, then topped with sparkling rose. Indian lemon pickle that needs sun-drying and three days of patience. Five unwaxed lemons boiled soft, cut into pieces, sun-dried until the skin firms and sugar crystallizes on the surface, then mixed with chili powder, turmeric, asafoetida, sugar, salt, and oil. I made these for a neighborhood barbecue in late May and they were the first thing gone from the dessert table. A vanilla cupcake batter with strawberry jam folded in right before baking, so the batter turns pink and the kitchen smells like a bakery.
