🥒 I made a nontraditional atchara using persian cucumber, garlic, red onion, and a thai chili. I used sukang puti (vinegar), seasoned it with salt, pepper, and sugar for my pickling brine and threw in some bay leaves for extra aromatics.
Traditional atchara usually consists of unripe papaya, but all I had was cucumber 🤷🏻♂️. How do you make atchara?
Main ingredients:
- 6 Persian cucumber
- 2 cloves of garlic
- 1/2 red onion
- 1 thai chili
- 1/2 cup of white vinegar (add more based on acidity)
- 3/4 cup of water
- 3 bay leaves
