Grilled Salmon and Quinoa Stack with Avocado Cream



Ingredients:
For the salmon:

1 pound salmon fillet
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
For the quinoa:

1 cup quinoa
2 cups vegetable broth
1/4 teaspoon salt
For the avocado cream:

1 avocado, ripe and diced
1/4 cup Greek yogurt
1 tablespoon lime juice
1/4 teaspoon salt
1/4 teaspoon black pepper
Instructions:
Cook quinoa: Bring the vegetable broth to a boil in a large pot. Add the quinoa and salt. Reduce heat, cover, and simmer for 15-20 minutes, or until the quinoa is tender.
Grill salmon: Brush the salmon fillet with olive oil and season with salt and pepper. Grill over medium-high heat for 4-5 minutes per side, or until cooked through.
Make avocado cream: In a small bowl, combine the avocado, Greek yogurt, lime juice, salt, and pepper. Mash or blend until smooth.
Assemble: Place the cooked quinoa in a bowl. Top with the grilled salmon, avocado cream, and any desired toppings, such as chopped cilantro or pickled red onions.
Serve: Serve immediately and enjoy!

Tips:

For a spicier dish, add a pinch of red pepper flakes to the avocado cream.
You can substitute the quinoa with brown rice or couscous.
Serve with a side salad or grilled vegetables.
