If you need a quick, nourishing lunch… make this.
High-protein, high-fiber, no-cook, and so easy to adjust to whatever your taste is that day.
This has been one of my favorite “I need something good right now” meals lately.
I always say measure with your heart, but here’s what I used today:
Recipe
• 1 ½ cans chickpeas, rinsed
• ½ lemon, juiced
• A big handful of fresh dill
• A little red onion, finely chopped
• 1 tbsp apple cider vinegar
• Salt + pepper
• Tiny splash of maple syrup
• 1 single-serve plain Greek yogurt (or skip for a vegan version)
Stir everything together and taste as you go.
Add more lemon for brightness, more yogurt for creaminess, or one more drip of maple to balance it all out.
It’s simple, grounding, and so satisfying on a busy day.
