~ Gochujang Cauliflower Tacos 🌮🔥~
RECIPE ⬇️

Servings: 4
Makes: 8 tacos
Oven: 220°C conventional or 200°C fan
Baking time: 22–26 minutes

Ingredients:

* 600 g cauliflower, cut into small florets
* 70 g plain flour
* 30 g cornflour
* 1 teaspoon garlic powder
* ½ teaspoon fine salt
* 150 ml sparkling water
* 100 g panko breadcrumbs
* 1 tablespoon neutral oil

Gochujang glaze

* 35 g gochujang paste
* 20 ml soy sauce
* 25 ml maple syrup or honey
* 15 ml fresh lime juice
* 1 teaspoon sesame oil

Lime slaw

* 150 g red cabbage, finely shredded
* 75 g carrot, finely shredded
* 20 ml fresh lime juice
* 1 teaspoon maple syrup or honey
* ¼ teaspoon salt

To serve

* 8 small corn or flour tortillas
* 2 spring onions, thinly sliced
* 10 g fresh coriander
* 2 teaspoons sesame seeds
* 1 lime, cut into wedges

Method

1. Preheat the oven to 220°C conventional or 200°C fan. Line a baking tray with parchment paper.
2. Combine the flour, cornflour, garlic powder and salt. Slowly whisk in the sparkling water to create a smooth batter.
3. Dip each cauliflower floret into the batter, allow the excess to drip off and coat it with panko.
4. Arrange the florets on the tray without touching. Drizzle or spray lightly with oil.
5. Bake for 22–26 minutes, turning halfway, until golden, crisp and tender.
6. Whisk together all glaze ingredients. Toss the hot cauliflower with just enough glaze to coat it lightly.
7. Mix the cabbage, carrot, lime juice, maple syrup and salt.
8. Warm the tortillas and fill them with slaw and glazed cauliflower. Finish with spring onion, coriander, sesame seeds and lime.
