My step by step guide to brisket palusami

Palusami Brisket ⬇️

I smoked my brisket at 180 degrees for 12 hrs overnight on my Masterbuilt . Then I wrapped in luau leaves, poured coconut cream and diced onions and then topped with beef tallow to create moisture and add extra fat. Then I threw back in my smoker at 275 for another 4 hours.

This buggah was majah! The brisket smell and onions had me wanting to smash right away. Was so tender and full of that fatty rich flavor I love. The coconut cream and onions helped take it over the top. Palusami style brisket is my new favorite go to for whole brisket laulau.

Spam Jun Musubi 🥚🥩🍚🍙🔥

Welcome back to my series, Comfort Foods With a Twist, where I take traditional dishes and bring them together in a whole new way!

For this one, I combined meat jun and Spam musubi into one crispy, spicy, savory bite. These are two iconic Hawaiʻi-style local dishes—not Hawaiian dishes—and mash them together.

I scored the so it could soak up the flavors of sriracha, gochujang, and hot honey creating a spicy shoyu, marinade, then coated it meat jun-style in flour and egg before frying it until golden brown. Build it into a musubi, add the optional dipping sauce and you have the ultimate local comfort food mashup!

1 can Spam
1/2 cup shoyu
2 tablespoons Melinda’s sriracha
2 tablespoons Melinda’s gochujang
1 tablespoon gochugaru
1 tablespoon sesame oil
1 tablespoon burnt garlic oil
Minced garlic, optional

Coating

2 cups all-purpose flour
5 eggs, beaten
Cooking oil, for frying

Instructions

1. Remove the Spam from the can and cut it into 6–7 even slices.
2. Lightly score both sides of each slice so the Spam can better absorb the marinade.
3. Mix the shoyu, sriracha, gochujang, gochugaru, sesame oil, burnt garlic oil and optional minced garlic.
4. Add the Spam to the marinade and refrigerate for at least 1 hour.
5. While the Spam is marinating, place the flour in one shallow dish and the beaten eggs in another.
6. Heat a thin layer of cooking oil in a frying pan over medium heat.
7. Remove each piece of Spam from the marinade, coat it in flour and then dip it into the beaten eggs.
8. Immediately place it into the hot pan and cook for 3–4 minutes per side, or until the egg coating is golden brown and cooked through.
9. Build your musubi with rice, nori and the Spam jun.
10. Serve with your favorite meat jun dipping sauce for an extra punch of sweet, tangy umami!

Summer grilling may be coming to an end, but around here, barbecue season never really ends 🔥

After a full summer of cooking, now is the perfect time to give your grills and smokers the deep clean they’ve probably been avoiding.

This smoker has been dirty since 2021.
Years of smoke, grease, and baked-on grime had this thing looking rough, so I brought in Bar Keeper’s Friend Soft Cleanser for some long-overdue maintenance.
