Korean Marinated Eggs (aka Korean Mayak Eggs) Try this recipe for a quick and budget friendly main dish for your lunch or dinner.
Korean Marinated Eggs Recipe
6 Hard boiled or soft boiled eggs
2 stems of green onions chopped
6 stems of cilantro chopped
1 small shallot finely chopped
2 cloves of garlic chopped
1 red chili pepper chopped (optional)*
1 cup of soy sauce
1/4 cup rice vinegar
1/2 cup of water
1 tsp pepper corns
1 tbsp sesame oil
1 tbsp sugar
Add accordingly in a mason jar. Stir and mix well. Marinate for at least 2 hours. You may eep in the refrigerator for about a week. The longer you marinate, the better the flavor.
Serve with steamed white rice, green vegetables (like bokchoy or broccoli), or serve on top of your ramen noodles.
*Add the chili pepper if you like it spicy
