No bake Low Carb Strawberry Cheesecake 🍓
For cream cheese filling:
Cream cheese 180g
All purpose cream 125ml
Sweetener 2-3 tbsp. (Can be adjusted according to your preference)
Salt pinch only
Lemon juice 1/2 tbsp.
For the crust:
Almond flour 1/4 cup
Coconut flour 1/4cup
Sweetener 1 sachet only
Melted Butter 27g
For toppings:
Frozen/fresh strawberries 50-100g
Water 2tbsp (for simmering)
Xanthan gum 1/8 tsp. (Used as thickener)
Sweetener 1 sachet only
Procedure:
Crust:
✓in a small pan, cook almond and coconut flour in low heat until just browned, when cooled add 1 tsp sachet and cooled melted butter. Mix until look like a wet sand.
✓transfer your crust into the desired container, spread and press until flattened. Set aside.
Cream cheese fillings:
✓Use an electric mixer beat together: cream cheese, salt, lemon juice and set aside
✓in a another mixing bowl, beat APC at high speed until thickened.
✓put together cream cheese mixture and APC using mixer. Beat until well combined.
✓get your prepared crust and put your cream cheese mixture on top of it. Put in the fridge.
Strawberry toppings:
✓in a small sauce pan, simmer strawberry, sweetener, xanthan gum and water together. Cook until thickens. You may crush whole strawberry pieces to achieve this jam like texture.
✓when already cooled down, put as your toppings.
*Put your cheesecake on the freezer for 3hrs, before eating so you can slice easily. Serve chilled. Enjoy!
*Cheesecake tastes better when refrigerated at least overnight. 😋
* I used 9inches round tin can, if you want a thicker cheesecake just use a smaller size of container.

Peanut Butter Chaffle
1 Egg
1 tbsp Heavy Cream
1 tbsp Unsweetened Cocoa
1 tbsp Powdered Sweetener
1 tsp Coconut Flour
1/2 tsp Vanilla Extract
1/4 tsp Baking Powder
Peanut Butter Filling
3 tbsp All natural Peanut Butter
2 tsp Powdered Sweetener
2 tbsp Heavy Cream
Preheat mini waffle maker.
In a small bowl, combine all chaffle ingredients & Pour half of the chaffe mixture into the center of the waffle iron. Allow to cook for 3-5 minutes.
Carefully remove and repeat for second chafe. Allow chaffles to sit for a
few minutes so that they crisp up.

Magic Cookies
1/4 C. coconut oil (melted)
4 tbsp. butter (softened)
2 tbsp. granular sweetener
4 egg yolks
1 C. KETO friendly dark chocolate chips
1 C. unsweetened coconut flakes
3/4 C. roughly chopped almonds
Preheat over 350 degrees and line a baking sheet with parchment paper. In a large bowl, stir together coconut oil, butter, sweetener and egg yolks. Mix in chocolate chips, coconut and almonds.
Drop batter by spoonful unto baking sheet and bake until golden, 15 minutes. (makes 18)

-1 oz package cheescake flavor Jell-O sugar free, fat free
-Comstock no sugar added cherry pie filling
Mix yogurt with pudding mix, (if it’s too thick you can add 1/8 cup unsweetened almond milk) put 1/2 cup into container, top with 1/8-1/3 cup cherries. Easy and so good!

Keto Cream Cheese Snickerdoodles 😋
Ingredients
1 stick butter (softened)
1 t vanilla
2 eggs
4 oz cream cheese softened
1 1/2 C almond flour
1/2 C coconut flour
1 t baking soda
1 1/4 C Lakanto Monkfruit Sweetener (classic)
1/2 t salt
2 T cinnamon
Instructions
Preheat oven to 350°
Mix butter, vanilla, eggs, and cream cheese
Add almond and coconut flour, baking soda, 1 C monkfruit sweetener, and salt and mix well
Refrigerate 10 minutes (while waiting mix together cinnamon with 1/4 C Lakanto sweetener)
Scoop and roll into balls then roll in cinnamon/sweetener mix
Place on greased baking sheet and bake approx 16-18 minutes depending on your oven temp
Remove from oven
Let cool and enjoy!

🫐 Keto Blueberry Scones with Lemon Glaze💙

1 1/2 cup almond flour
1/4 cup coconut flour
1 tsp baking powder
1/3 cup Sweetener
2 eggs large
1/2 cup coconut oil melted
1 tsp vanilla extract

No Bake Chocolate Peanut Butter Cookies (can make into balls)
1 1/4 Cup Almond Flour (can add more)
2 TBSP Peanut Butter
2 TBSP Coconut Oil
2 TBSP Lily’s Chocolate Chips
1) microwave coconut oil & peanut butter for 15 seconds
Stir
2) pour into flour
3) mix together
4) add chocolate chips
5) roll into balls or use a spoon place on cookie sheet (I don’t have the wax paper- so I used tin foil)
6) freeze for 5 mins
Enjoy!!
