Boy do I miss early batches of this in bombers. Dry hopped sour with apricots. Cheater beer for this insane NYC heat.
Zippy acidity, juicy stone fruit,
In that vein of Sour IPAs.

I really wanted to try the popup
for the first time. The Krab Rangoon Slice was the last on my preference, but I went with it since it was recommended.
I was wrong.

This is the best "weird" pizza I've had in a while.

Not too cream cheesy to dominate the slice. The imitation Krab was supple and soft almost like balls of fresh mozz. And the freshly made abundant wonton strips added so much needed crunch to the slice.

I took half home and threw on some Fly by Jing Chili Crisp and it took it to another level.

This was insanely delicious. Crunchy greens and chewy noodles with their insane sauce.

To preface this is my new favorite vegetarian dish and literally the best recipe I can remember. It’s a combination of smashed cucumber salad and the wood ear/bean curd skin spicy Chinese salad, a top 3 dish I had in NYC, and that list was stupid good. My recipe sucks because I eyeballed, adjusted to taste. Do you, ask me any questions.

4 small to medium cucumbers
Dried wood ear
Dried bean curd skin (look for the sticks, but the thin sheets work too)
1 bunch of chopped cilantro (add some scallion too if you want)
5-10 dried chopped Szechuan dried chilies (optional on how spicy you like it)
3-5 garlic cloves minced

Dressing:
4 tbs rice vinegar
3 tbs chili crisp
2 tbs sesame oil
2 tbs soy sauce
3 tbs toasted sesame seed
2 tbs black vinegar
1 tbs sugar

Half the cucumbers. Scrap out seeds. Smash with medium intensity to help seasoning marinate into them. Chop into thumb size chunks.
Hydrate wood ear and bean curd in water for a few hours. 
Boil wood ear for 5-10 minutes and blanche.
Chop wood ear and bean curd into bite size. 

Throw it all together. Chill in fridge. Serve with rice. Have it with a fried egg or other Asian dishes. Don’t worry if you make too much dressing. It goes great on rice and it’s really nice to have the salad soaking in that dressing.
