Some peppers actually get a new name once they’re dried.
As they lose moisture, their flavor, aroma, texture, and cooking uses can change dramatically. A fresh jalapeño becomes a chipotle when smoked and dried, while a dried poblano is known as an ancho.
It’s the same pepper—but in a completely different form, with a different name and flavor.
