And this book is so much more than just recipes (although there’s 140 of them and they’re all incredibly delicious) – the most important part of the book are the rules for adapting recipes. These are actual QUANTITATIVE rules that tell you *exactly* how to convert pretty much any baking recipe into whatever free-from version you fancy. In a way, this is a sneak peek into how my nerdy science brain works 😂 Because these are the rules I follow every time I’m developing a new recipe – so I know that they work and they work well.
