Corn Salad
Salad:
6 ears of corn, 3 charred on grill or under broiler
1 green pepper (or Jalapeno for more spice) diced
1 red pepper, diced
1 orange (or yellow) pepper, diced
2 large shallots, diced@
7-8 green onions (green and white parts) Sliced long way and then cut thin
1 English cucumber, diced
1 bunch of cilantro, chopped fine
1 lb bacon, thick cut is preferred, cooked crispy and cut into small pieces
1.5 tbsp (or more to taste) Stateline Eloté Corn Seasoning
Optional: 1 can of black or pinto beans, rinsed

Dressing:
3 limes, juiced
3/4 cup sour cream
2 TBSP Stateline Eloté Corn Seasoning
Salt and pepper to taste

Directions:
1. Char 3 ears of corn, and then remove corn from cob filor all 6 ears.
2. Combine remaining Salad ingredients ina large bowl
3. In a separate bowl, combine dressing ingredients, mix well
4. Pour dressing over Salad
5. Let sit for minimum of 2 hours for best flavor
6. Enjoy!!!
