Sticky Gooseberry Chicken Thighs🍗😋

Ingredients for 4 servings:
8 bone-in skin-on chicken thighs
200 g gooseberries (fresh or frozen)
2 tbsp honey
1 tbsp apple cider vinegar
1 tsp Dijon mustard
1 garlic clove, minced
500 g new potatoes
2 tbsp olive oil
1 tsp dried mixed herbs
2 courgettes
Salt and black pepper, to taste

Step 1/4
500 g new potatoes - 2 tbsp olive oil - 1 tsp dried mixed herbs - Salt and black pepper, to taste.
Preheat oven to 200°C. Halve the new potatoes, toss with olive oil, herbs, salt, and pepper. Spread on a baking tray and roast for 50 minutes, turning halfway.

Step 2/4
200 g gooseberries - 2 tbsp honey - 1 tbsp apple cider vinegar - 1 tsp Dijon mustard - 1 garlic clove, minced - Salt and black pepper, to taste.
In a saucepan, combine gooseberries, honey, vinegar, mustard, garlic, salt, and pepper. Simmer for 10–12 minutes until thick and jammy. Blend if desired for a smooth glaze.

Step 3/4
8 bone-in skin-on chicken thighs - Salt and black pepper, to taste.
Season chicken thighs with salt and pepper. Place on a baking tray lined with foil. Roast at 200°C for 30 minutes, then brush with glaze and cook 15–20 minutes more, brushing again halfway through.

Step 4/4
2 courgettes - 1 tbsp olive oil - Salt and black pepper, to taste.
Slice courgettes into thick rounds. Toss with olive oil, salt, and pepper. Grill or pan-sear on high heat for 2–3 minutes per side until charred.

Sticky Cider Pork & Apple Slaw🍖🔥

Ingredients for 4 servings:
4 bone-in pork chops
250 ml apple cider
2 tbsp Dijon mustard
2 tbsp brown sugar
1 tbsp soy sauce
1 tbsp apple cider vinegar
1 tsp olive oil
1 green apple, julienned
1 red apple, julienned
1 small carrot, shredded
1/4 small red cabbage, thinly sliced
2 tbsp Greek yogurt
1 tbsp mayonnaise
1 tsp lemon juice
Salt, to taste
Black pepper, to taste

Step 1/4
250 ml apple cider - 2 tbsp Dijon mustard - 2 tbsp brown sugar - 1 tbsp soy sauce.
Combine cider, mustard, brown sugar, and soy sauce in a saucepan. Simmer over medium heat for 10–12 minutes until reduced by half and sticky. Set aside.

Step 2/4
1 tsp olive oil - 4 bone-in pork chops - Salt - Black pepper.
Season pork chops with salt and pepper. Heat olive oil in a pan over medium-high heat. Sear chops for 3–4 minutes on each side until golden and cooked through.

Step 3/4
Brush glaze over pork chops, cooking another 2–3 minutes, turning to coat evenly. Remove from heat and rest for 5 minutes.

Step 4/4
1 green apple - 1 red apple - 1 small carrot - 1/4 small red cabbage - 2 tbsp Greek yogurt - 1 tbsp mayonnaise - 1 tsp lemon juice - Salt.
Toss apples, carrot, and cabbage in a bowl with yogurt, mayo, lemon juice, and a pinch of salt. Serve slaw alongside glazed pork chops.

Cheesy Bacon Muffin Loaf🧀🥓🍞

Ingredients for 6 servings:
250 g self-raising flour
1 tsp baking powder
1/2 tsp salt
1/2 tsp black pepper
1 tsp Dijon mustard
2 large eggs
180 ml milk
60 ml vegetable oil
120 g grated cheddar cheese
100 g cooked crispy bacon, chopped
3 spring onions, finely sliced

Step 1/4
250 g self-raising flour - 1 tsp baking powder - 1/2 tsp salt - 1/2 tsp black pepper.
In a large bowl, whisk together flour, baking powder, salt, and pepper.

Step 2/4
1 tsp Dijon mustard - 2 large eggs - 180 ml milk - 60 ml vegetable oil.
Add mustard, eggs, milk, and oil to the dry ingredients. Mix until just combined.

Step 3/4
120 g grated cheddar cheese - 100 g cooked crispy bacon, chopped - 3 spring onions, finely sliced.
Fold in cheese, bacon, and spring onions. Pour mixture into a greased loaf tin.

Step 4/4
Bake in a preheated oven at 180°C for 35 minutes or until golden on top and a toothpick comes out clean. Let cool slightly before serving.

Beef & Ale Yorkie Pie Stack😋🔥

Ingredients for 4 servings:
600 g beef chuck, cut into chunks
2 tbsp flour
2 tbsp vegetable oil
1 onion, chopped
2 garlic cloves, minced
330 ml brown ale
500 ml beef stock
2 tbsp tomato paste
2 tsp Worcestershire sauce
2 sprigs thyme
Salt and pepper, to taste
3 large eggs
125 ml milk
75 g plain flour
2 tbsp beef dripping or oil
400 g potatoes, peeled and chopped
50 ml whole milk (for mash)
25 g butter (for mash)
1 tsp Dijon mustard
2 shallots, thinly sliced
2 tbsp plain flour (for crispy shallots)
Vegetable oil, for frying

Tools:
Muffin tin or Yorkshire pudding tin
Piping bag with star nozzle

Step 1/4
600 g beef chuck - 2 tbsp flour - 2 tbsp vegetable oil - 1 onion - 2 garlic cloves - 330 ml brown ale - 500 ml beef stock - 2 tbsp tomato paste - 2 tsp Worcestershire sauce - 2 sprigs thyme - Salt and pepper.
Toss beef in flour, season with salt and pepper. Brown in oil in a Dutch oven, then remove. In the same pot, sauté onion and garlic until soft. Add beef back, stir in ale, stock, tomato paste, Worcestershire, and thyme. Bring to a simmer, cover and braise at 160°C for 2.5 hours until tender. Shred beef and reduce gravy if needed.

Step 2/4
3 large eggs - 125 ml milk - 75 g plain flour - 2 tbsp beef dripping.
Whisk eggs, milk, and flour with a pinch of salt into a smooth batter. Rest 15 minutes. Preheat oven to 220°C. Divide dripping into muffin tin, heat until smoking, pour in batter. Bake 20-25 minutes until puffed and golden.

Step 3/4
400 g potatoes - 50 ml whole milk - 25 g butter - 1 tsp Dijon mustard - Salt.
Boil potatoes until tender, drain. Mash with milk, butter, mustard, and salt until smooth. Spoon into piping bag fitted with star nozzle.

Step 4/4
2 shallots - 2 tbsp plain flour - Vegetable oil.
Dust shallots in flour and deep-fry until golden and crispy. Drain on paper towel. Fill each Yorkshire with beef mixture, pipe mashed potato swirls on top, then scatter with crispy shallots. Serve hot.

Spiced Egg Mayo Brioche Rolls🥪🍳

6 large eggs
4 brioche buns
3 tbsp mayonnaise
1 tsp tikka masala spice blend
1/2 red onion, finely chopped
1 tbsp fresh coriander, chopped
1 tsp lemon juice
1/2 tsp salt
1/4 tsp black pepper
1 tbsp unsalted butter

Step 1/4
6 large eggs.
Place eggs in a saucepan, cover with water, and bring to a boil. Once boiling, cook for 8 minutes. Transfer eggs to ice water and let cool. Peel and chop roughly.

Step 2/4
3 tbsp mayonnaise - 1 tsp tikka masala spice blend - 1/2 red onion, finely chopped - 1 tbsp fresh coriander, chopped - 1 tsp lemon juice - 1/2 tsp salt - 1/4 tsp black pepper.
In a bowl, mix mayonnaise, tikka spice, red onion, coriander, lemon juice, salt, and pepper. Add chopped eggs and stir gently to combine.

Step 3/4
1 tbsp unsalted butter - 4 brioche buns.
Slice brioche buns and toast lightly in a pan with butter until golden and warm.

200 g all-purpose flour
150 g granulated sugar
125 g unsalted butter (softened)
2 large eggs
2 tsp baking powder
1/4 tsp salt
100 ml whole milk
1 lemon (zested and juiced)
150 g fresh raspberries
3 tbsp coarse sugar (for glaze)

Step 1/4
125 g unsalted butter - 150 g granulated sugar - 2 large eggs - 1 lemon (zested)
Cream the butter and sugar together until pale and fluffy. Beat in the eggs one at a time, then stir in the lemon zest.

Step 2/4
200 g all-purpose flour - 2 tsp baking powder - 1/4 tsp salt - 100 ml whole milk
In a separate bowl, sift together the flour, baking powder, and salt. Add to the wet mixture, alternating with the milk, until smooth.

Step 3/4
150 g fresh raspberries
Gently fold in the raspberries. Pour the batter into a lined loaf tin and bake at 180°C for 45–50 minutes, until golden and a skewer comes out clean.

50 g grated Parmesan
80 g all-purpose flour
100 ml whole milk
1 tsp baking powder
30 g unsalted butter, melted
Salt and black pepper, to taste
1 tbsp white vinegar
Fresh parsley, chopped (optional, for garnish)

Tools:
Waffle iron

Step 1/4
100 g pancetta.
Cook pancetta in a skillet over medium heat until crispy. Remove and set aside on paper towel. Reserve rendered fat in pan.

Step 2/4
80 g all-purpose flour - 1 tsp baking powder - 1 egg - 100 ml whole milk - 30 g unsalted butter - 25 g grated Parmesan - Salt and black pepper.
In a bowl, mix flour, baking powder, and a pinch of salt. In another bowl, whisk egg, milk, and melted butter. Combine wet and dry ingredients, then stir in Parmesan and a spoonful of reserved pancetta fat. Cook waffles in preheated waffle iron until golden.

400 ml beef stock
2 tbsp tomato paste
2 tbsp Worcestershire sauce
2 tbsp apple cider vinegar
1 tbsp brown sugar
200 g red cabbage, finely shredded
1 carrot, grated
0.5 small red onion, thinly sliced
4 tbsp white wine vinegar
1 tbsp sugar
0.5 tsp salt
1 tsp mustard seeds
6 mini brioche buns
6 tsp caramelised onion chutney
Fresh coriander, for garnish

Tools:
Slow cooker or Dutch oven

Step 1/4
800 g beef chuck - 1 tbsp olive oil - 1 large onion - 3 garlic cloves - 1 tsp smoked paprika - 1 tsp ground cumin - 0.5 tsp chili powder - 1 tsp salt - 0.5 tsp black pepper - 400 ml beef stock - 2 tbsp tomato paste - 2 tbsp Worcestershire sauce - 2 tbsp apple cider vinegar - 1 tbsp brown sugar.
Heat the olive oil in a Dutch oven over medium heat. Brown the beef on all sides, then remove. In the same pot, sauté onion and garlic until soft. Add spices, stir, then return beef with tomato paste, Worcestershire, vinegar, sugar, and stock. Cover and cook on low heat for 3 hours until tender. Shred the beef with forks once done, mixing it with the sauce.

Step 2/4
200 g red cabbage - 1 carrot - 0.5 small red onion - 4 tbsp white wine vinegar - 1 tbsp sugar - 0.5 tsp salt - 1 tsp mustard seeds.
In a bowl, combine shredded cabbage, carrot, and red onion. In a small saucepan, heat vinegar, sugar, salt, and mustard seeds until dissolved. Pour over the slaw. Chill in the fridge for at least 30 minutes.

6 mini brioche buns.
Lightly toast the brioche buns under a grill or in a hot pan until golden.

6 tsp caramelised onion chutney - Shredded beef - Pickled slaw - Fresh coriander.

200 g spaghetti - Salt.
Bring a large pot of salted water to a boil. Cook the spaghetti until al dente, according to package instructions. Reserve 100 ml of pasta water, then drain.

Step 2/4
100 g pancetta - 1 clove garlic.
While pasta cooks, heat a large pan over medium heat. Add pancetta and garlic. Cook until pancetta is crispy, about 5-7 minutes. Discard the garlic.

Step 3/4
2 egg yolks - 1 whole egg - 50 g grated Parmesan cheese - Freshly ground black pepper.
In a bowl, whisk together the egg yolks, whole egg, Parmesan, and a generous amount of black pepper.

2 carrots, diced
2 tbsp tomato paste
150 ml beef stock
1 tbsp Worcestershire sauce
750 g potatoes, peeled and diced
50 g butter
100 ml milk
Salt and pepper to taste
1 tbsp olive oil

Step 1/4
1 tbsp olive oil - 1 onion, finely chopped - 2 carrots, diced.
Heat oil in a pan over medium heat. Add onion and carrots, cooking for 5–6 minutes until softened.

Step 2/4
500 g minced beef - 2 tbsp tomato paste - 150 ml beef stock - 1 tbsp Worcestershire sauce - Salt and pepper to taste.
Add minced beef and cook until browned. Stir in tomato paste, Worcestershire sauce, stock, salt, and pepper. Simmer for 15 minutes until thickened.

Step 3/4
750 g potatoes, peeled and diced - 50 g butter - 100 ml milk - Salt to taste.
Boil potatoes in salted water until tender, about 15 minutes. Drain, then mash with butter and milk until smooth. Season to taste.

Step 4/4
Preheat the oven to 200°C. Spread the meat mixture into a baking dish. Top evenly with mashed potatoes. Bake for 25 minutes or until golden and bubbling.

Crispy Halloumi Chilli Jam Wraps🌯😎

Ingredients for 2 servings:
200 g halloumi, sliced
2 large tortilla wraps
3 tbsp sweet chilli jam
1 cup shredded red cabbage
1 small carrot, grated
1 handful rocket leaves
1 tbsp olive oil
Juice of 1/2 lime
Salt and pepper, to taste

Step 1/4
1 tbsp olive oil - 200 g halloumi, sliced.
Heat olive oil in a pan over medium heat. Fry halloumi slices for 2–3 minutes per side until golden and crispy. Set aside.

Step 2/4
1 cup shredded red cabbage - 1 small carrot, grated - Juice of 1/2 lime - Salt and pepper, to taste.
In a bowl, toss together cabbage, carrot, lime juice, salt, and pepper to make a quick slaw.

Step 3/4
2 large tortilla wraps - 3 tbsp sweet chilli jam.
Warm the wraps in a dry pan or microwave for 20 seconds. Spread 1.5 tbsp chilli jam on each wrap.

Step 4/4
Crispy halloumi slices - Prepared slaw - 1 handful rocket leaves.
Layer halloumi, slaw, and rocket onto each wrap. Fold and roll tightly. Slice in half and serve warm or wrap for later.
