Creamy Mushroom Potato Curry brings comfort in every bite! ๐๐ง๐ฅ
Total time: 45 minutes
Prep time: 15 minutes, Cook time: 30 minutes
Ingredients for 4 servings:
2 tbsp vegetable oil
1 large onion, finely chopped
3 garlic cloves, minced
1 tbsp grated ginger
200 g mushrooms, sliced
300 g potatoes, peeled and cubed
1 tsp ground turmeric
1 tsp ground cumin
1 tsp garam masala
1 tsp chili powder
400 ml coconut milk
200 ml water
Salt to taste
Fresh coriander, chopped (for garnish)
Step 1/4
2 tbsp vegetable oil - 1 large onion - 3 garlic cloves - 1 tbsp grated ginger.
Heat oil in a pan over medium heat. Sautรฉ onion, garlic, and ginger for 5 minutes until softened and fragrant.
Step 2/4
200 g mushrooms - 300 g potatoes.
Add sliced mushrooms and potatoes to the pan. Cook for 5 minutes, stirring occasionally.
Step 3/4
1 tsp ground turmeric - 1 tsp ground cumin - 1 tsp garam masala - 1 tsp chili powder - 400 ml coconut milk - 200 ml water - Salt to taste.
Stir in all the spices, coconut milk, water, and salt. Bring to a boil, then reduce heat and simmer for 20 minutes until potatoes are tender.

Garnish with chopped coriander and serve hot with rice or naan.
