Apple Crumble Yorkie Bombs ๐๐ฅ A British twist you wonโt believe!
Total time: 50 minutes
Prep time: 20 minutes, Cook time: 30 minutes
Ingredients for 6 servings:
2 large eggs
100 ml whole milk
70 g plain flour
Pinch of salt
2 tbsp vegetable oil
2 apples (peeled, cored, diced)
25 g brown sugar
1/2 tsp ground cinnamon
1 tbsp lemon juice
40 g plain flour (for crumble)
25 g cold butter (cubed)
25 g granulated sugar
Custard or cream, for serving

Step 1/4
2 large eggs - 100 ml whole milk - 70 g plain flour - Pinch of salt.
Whisk together eggs, milk, flour, and salt until smooth. Let batter rest for 10 minutes. Preheat oven to 220ยฐC. Divide vegetable oil into 6 muffin tin holes and place the tin in the oven to heat up.

2 tbsp vegetable oil.
Carefully pour the rested batter into hot oil-filled muffin holes. Bake for 20 minutes until puffed and golden. Do not open oven door during baking.

2 apples - 25 g brown sugar - 1/2 tsp ground cinnamon - 1 tbsp lemon juice.
In a pan, cook apples with sugar, cinnamon, and lemon juice over medium heat for 10 minutes until soft and syrupy. Set aside.

40 g plain flour - 25 g cold butter - 25 g granulated sugar.
Rub butter into flour and sugar to form coarse crumbs. Bake on a tray at 180ยฐC for 10 minutes until golden. Fill each Yorkshire pudding with warm apple compote, top with crumble, and drizzle with custard or cream to serve.
