It's been a minute or two since I really made a post. Sometimes life just gets really busy and some things gotta give. My daughter Champa was carving pho and I forgot to pack the broth I made the other day to bring to her so I asked her to just boil some shanks and marrows for a few hours before I got to her. I had made my gigantic pot of pho a few days ago and served a good 40 plus bowls but still had plenty of broth left. When I got home I quickly seasoned the beef broth with all the love I have for her πŸ€£πŸ˜…πŸ’•πŸŒ I'm going camping in a few days to slow life down and hopefully bring you into my camp kitchen and enjoy yummy food and a calm peaceful meal together. XOXO

We were so hungry and stuck in traffic so I decided to phone in our order to be ready once we arrived at .khao.lao AND as soon as we sat down our first dish nam khao arrived! We love coming here when we are in San Diego because it tastes like home cooking. The service and owner is great too! If I can't cook for family and friends I bring them here to enjoy delicious flavors of Laos.

Thum Makhoong when we first got to Laos five weeks ago and Little Miss Champa wanted Thum Makhoong before our fight back tonight. Le Padaek suits the name cause the padaek in their Thum and grill chicken was delicious!

Looks like Little Miss Champa's five weeks time in Laos was a success. She has learned how to read and write the Lao language and can speak basic conversations. I know as parents it's also up to us to help her practice by talking to her in Lao as much as possible even when it gets frustrating that she doesn't understand everything. Just like everything else it will take lots of practice and patience.

Baby girl please don't forget all that you've learned. Practice your writing daily and FaceTime with your Lao leader and language partner weekly. It's so delightful to see how much Champa has blossomed since she first got here. Her confidence and love for Laos have grown in ways I never imagined through this experience. She's also made lifelong friendships with her fellow students as well as local Lao friends. She said to me last week, "Mommy I'm sad we're going home soon. I'm going to miss Laos so much". She wants to come back next year to volunteer or intern so she can be immersed in the language even more. Oh beautiful Laos I'm so happy you have my daughter's heart too cause we are all daughters and sons of Laos no matter how faraway we are. It's the land and home of our mothers and fathers so it is our home as well. XOβ™₯οΈπŸ’™πŸ‡±πŸ‡¦πŸ’•πŸ™πŸ½ THANK YOU for making us feel truly cared for and at home here. The level of service and attention to detail is what sets this favorite hotel of ours apart.

With their permissions I share this story... I met CB on July 9th when his brother (my FB friend from πŸ‡ΊπŸ‡Έ) DM asking if I can visit his brother. Without hesitation I said yes before quickly realizing I don't meet with the opposite s*x one on one out of respect for my marriage. But somehow I felt I'm too old to care what society thinks and as long as my hubby knows that's what matters. So from that initial meeting I was introduced to Peter and Pumie and learned what they do here in Laos for work and their free time. Also met Pumie visiting from USA who gave me his Kip money before going back to the States which I used to help provide food for the kids. Along with kind donation.

Peter started an English class last year in the village they all live at. They all help to pitch in what they can with their limited Lao wages. Pumie brought WiFi to the classroom and that's so helpful. Every evening, Monday to Friday, after his work Peter teaches from 6-7:30 pm. Other volunteers like Vone also come to help teach. The village kids are so happy and eager to learn!

The western meal was a treat for the kiddos but what surprised me was how much they love the blue socks! They put it on and was showing how much they love them. And a a few asked at the end if I had any left so they can bring to their siblings at home. Luckily I had a few pairs left. It's these things that seem simple to us but so appreciated that keeps me driven to serve and help these children.

I'm committed to help Peter make this white classroom look like a real English classroom filled with colorful alphabets and other learning materials. Thank you guys for having the heart to help the kids! You're making a big difference in their lives and your own lives as well!

"This means a lot more to the parents than you'll realize. It takes off some financial burden they have if they were to buy these items for their children" was what the village chief expressed to us. What does $20 buy for you?

For these kids $20 means a new backpack, school uniform, shoes, and educational supplies for the year. Socks and dental kits were donated from USA by sensan Seeing the joy on these precious children's faces was priceless. We went on a Saturday so not all 70 students were present to receive their gifts but they'll get it later. This is my fountain of youth and peace. I'm so proud to be a part of something Jai Lao Foundation that gives from the heart.

In the Lao culture back in the olden days, women would wear sinh taem or cotton skirts as a daily casual wear and to take baths at home or in the river. These days, especially in the western world, it's not worn much at all. I still wear it cause I think it's so comfortable and easy to move around in. As you can see in this video, sinh taem can be used as a changing cover up after a refreshing swim. Both my hubby Tui and daughter Champa preferred changing outside by the van over the dark and dingy public park bathrooms in Vang Vieng.
