Mini Pineapple Upside-Down Cheesecakes 😍🍍
Ingredients:
1 1/2 cups graham cracker crumbs
1/4 cup melted butter
2 (8 oz) packages cream cheese, softened
1/2 cup granulated sugar
2 large eggs
1 tsp vanilla extract
1 can (20 oz) pineapple chunks, drained
1/4 cup caramel sauce
Directions:
Preheat the oven to 350°F (175°C). Line a muffin tin with paper liners.
In a medium bowl, mix the graham cracker crumbs and melted butter until well combined. Press the mixture into the bottom of each muffin cup to form a crust.
In a large bowl, beat the cream cheese and sugar until smooth and creamy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
Divide the cream cheese mixture evenly among the muffin cups, filling each about 3/4 full.
Top each cheesecake with a few pineapple chunks.
Bake in the preheated oven for 20-25 minutes, or until the cheesecakes are set. Remove from the oven and let cool completely in the muffin tin.
Drizzle caramel sauce over each cheesecake before serving.

I grew up thinking pickled beets were something only grandparents ate straight from the jar at holiday dinners. Then one summer, my neighbor brought over a mason jar of these deep ruby-red beauties, still warm from the stove, and everything changed.These aren't the mushy, overly vinegary beets you remember avoiding at potlucks. These are tender, sweet, tangy, and somehow both earthy and bright at the same time. The brine has just enough sugar to balance the vinegar, and the spices make them taste like they came from an expensive deli.I made three jars last weekend and two are already gone. My husband has been eating them straight from the fridge with a fork. No shame.**INGREDIENTS:**• 3 lbs fresh beets, medium-sized• 1½ cups white vinegar• 1½ cups water• ¾ cup granulated sugar• 1 tablespoon kosher salt• 1 teaspoon whole black peppercorns• 4 whole cloves• 1 cinnamon stick• 1 bay leaf• 1 small onion, thinly sliced (optional but adds great flavor)**INSTRUCTIONS:**Trim beet greens, leaving about an inch of stem. Scrub beets gently but don't peel yet.Place beets in a large pot and cover with water. Bring to a boil, then reduce heat and simmer for 35–45 minutes, until fork-tender.Drain and let cool just enough to handle. The skins will slip right off under cool running water.Slice beets into ¼-inch rounds or wedges, depending on your preference.In a medium saucepan, combine vinegar, water, sugar, salt, peppercorns, cloves, cinnamon stick, and bay leaf. To make fried chicken gizzards and gravy, you'll need 1 lb chicken gizzards, 1 cup all-purpose flour, 1 tsp garlic powder, 1 tsp onion powder, 1 tsp paprika, salt, pepper, 1 egg, 1/4 cup buttermilk, 2 cups chicken broth, 2 tbsp butter, and 2 tbsp flour for the gravy.

Start by cleaning the gizzards and cutting them into bite-sized pieces if necessary. In a bowl, whisk together the flour, garlic powder, onion powder, paprika, salt, and pepper. In a separate bowl, beat the egg and mix in the buttermilk.

Dip the gizzards into the egg mixture, then dredge them in the seasoned flour, making sure they are coated well.

Heat oil in a deep skillet or fryer over medium-high heat. Fry the gizzards for about 5-7 minutes, or until they are golden brown and crispy. Remove them from the oil and set aside to drain on paper towels.
