Dear Babsienoodles
Most recent blood test came back borderline diabetic EEEK! 😧 so I’m back on a health food kick. High protein, high fiber, low fat and preferably still lush. This dish took longer to prepare than anticipated and I didn’t have high hopes for taste (mostly coz I added double the amount of a herb by mistake), but thankfully it’s still very palatable and ridiculously healthy 😋 Though pretty mingin’ on it’s own without the tahini drizzle 🥴
I found the recipe on FB and aside from the extra teaspoon of ground coriander, I added my signature bed of power greens and Bob’s yer uncle!
My first time messing about with aubergine, lentils, tahini, Feta and Greek yoghurt. Thankfully red pepper, pomegranate and I go way back, whilst red onion and I bonded relatively recently over Lizzy Lou’s best cheese and onion sarnie in the universe.
Jury is out on the salty Feta 😑
Fingers crossed I can keep this up and hold diabetes type 2 at bay coz it’s no flippin joke as you well know.
