COFFEE CAKE COOKIES with maple glaze drizzle🤤
I decided to make these coffee cake cookies last minute for Christmas night and they did not disappoint🙌🏻 They took me about 30min to make and I already had all the ingredients in my pantry! They’re made with better for you ingredients and they go perfect with a nice warm cup of coffee☕️
Recipe:
Cookie:
-1 3/4 cup almond fluor
-1 tsp baking powder
-1 tsp cinnamon
-dash of salt
-1/3 cup almond butter, runny
-1/3 cup maple syrup
-1 egg
-dash of vanilla
Crumble Topping:
-1 cup raw pecans, finely chopped or pulse in blender
-1 tbsp coconut sugar
-1 1/2 tbsp melted coconut oil
-1 tsp cinnamon
-pinch of salt
Maple Glaze:
-2 tbsp vegan butter
-1/3 cup maple syrup
-3/4 cup powdered sugar (add more if needed)
How to:
-Preheat oven to 350F and line a baking sheet with parchment paper
-In a large bowl, add the almond butter, maple syrup, egg, and vanilla and whisk together until smooth
-To the same bowl, add in the almond flour, baking powder, cinnamon and salt. Mix with spoon or spatula until a thick dough forms
-Scoop dough out with a spoon and roll it into large balls with your hands, place dough on parchment paper
-Grease the back of a tablespoon or small spoon and gently make an indent in each cookie
-To make the crumble, finely chop or pulse the pecans in a blender. In a small bowl add all ingredients and stir well until the pecans are nicely coated
-Sprinkle the crumble into each cookie indent and gently press crumble into cookies
-Bake for about 15min
-To make the glaze, melt butter and maple syrup in microwave until butter is fully melted, add in powdered sugar and whisk until a thick icing is formed, add more powdered sugar to make it thicker
-Let cookies completely cool before drizzling on glaze
-I like to warm mine up in the microwave for about 15 seconds before eating, enjoy!
