Crockpot Corned Beef and Cabbage

🛒Ingredients:

3-4 lb corned beef brisket with spice packet
1 small head of cabbage, cut into wedges
6 small red or gold potatoes, halved
3 large carrots, cut into chunks
1 onion, quartered
3-4 cups beef broth or water
2 bay leaves
1 teaspoon black peppercorns
Fresh parsley for garnish

👨🏾‍🍳Directions:

Place the corned beef brisket into the crockpot, fat side up.

Sprinkle the spice packet over the brisket.

Add the halved potatoes, carrots, onion, and cabbage wedges around the beef in the crockpot.

Pour the beef broth or water into the crockpot, ensuring that the vegetables and corned beef are mostly submerged.

Add the bay leaves and black peppercorns to the liquid.

Cover and cook on low for 8 hours or on high for 4 hours until the beef is tender and the vegetables are cooked through.

Once cooked, remove the corned beef from the crockpot and let it rest for 10 minutes before slicing against the grain.

Serve the sliced corned beef with the cabbage, potatoes, and carrots, garnished with fresh parsley.

Surf & Turf with Cajun Cream Sauce & Alfredo Pasta

Ingredients:

For the Steak:

1 thick-cut steak (ribeye or strip), about 8 oz

Salt and pepper

1 tbsp olive oil

For the Cajun Cream Sauce:

2 tbsp butter

1 small onion, finely chopped

2 garlic cloves, minced

1 tsp Cajun seasoning

1/2 cup heavy cream

1/4 cup chicken broth

Salt and pepper to taste

For the Shrimp:

8 large shrimp, peeled and deveined

1 tbsp olive oil

1 tsp Cajun seasoning

For the Alfredo Pasta:

6 oz fettuccine pasta

2 tbsp butter

1 cup heavy cream

1 cup freshly grated Parmesan cheese

1/4 tsp black pepper

Salt to taste

For Garnish:

Fresh parsley, finely chopped

Instructions:

Prepare Alfredo Pasta:

Cook fettuccine in salted boiling water until al dente. Drain.

In a saucepan, melt butter, add heavy cream, bring to a simmer.

Stir in Parmesan cheese and black pepper until smooth and creamy.

Toss pasta in Alfredo sauce to coat fully; keep warm.

Cook Steak:

Season steak generously with salt and pepper.

Heat olive oil in skillet over medium-high heat.

Sear steak 3-4 minutes per side until desired doneness. Rest and slice thinly.

Make Cajun Cream Sauce:

In the same skillet, melt butter and sauté onions until translucent.

Add garlic and Cajun seasoning; cook 1 minute.

Pour in chicken broth and cream, simmer until slightly thickened.

Season with salt and pepper.

Cook Shrimp:

Toss shrimp with olive oil and Cajun seasoning.

Sear in skillet over medium heat until pink and slightly charred (2-3 minutes per side).

Assemble Dish:

Pour Cajun cream sauce into deep plate.

Arrange sliced steak on the sauce.

Place shrimp beside steak.

Add a nest of Alfredo pasta on the plate.

Garnish with freshly chopped parsley.

Serve immediately with warm rustic bread or a fresh side salad.

Lemon Garlic Chicken with Creamy Bowtie Pasta

Ingredients:

12 oz bowtie (farfalle) pasta

2 boneless, skinless chicken breasts

1 tablespoon olive oil

3 tablespoons unsalted butter

4 cloves garlic, minced

Zest and juice of 1 large lemon

1 ½ cups heavy cream

¾ cup grated Parmesan cheese

Salt and black pepper to taste

2 tablespoons fresh parsley, chopped

Directions:

Cook bowtie pasta according to package directions until al dente. Drain and set aside.

Season chicken breasts with salt and pepper.

Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for 5-6 minutes per side or until fully cooked and lightly golden. Remove from skillet, let rest for 5 minutes, then slice thinly.

In the same skillet, melt butter over medium heat. Add minced garlic and sauté for 1 minute until fragrant.

Stir in lemon zest and juice, cooking for another minute.

Pour in heavy cream and bring to a gentle simmer for 2-3 minutes.

Stir in Parmesan cheese, mixing until the sauce is smooth and creamy. Season with salt and pepper to taste.

Toss the cooked bowtie pasta into the sauce to coat evenly.

Top with sliced chicken and garnish with fresh parsley before serving.

Steak & Cheese Quesadillas
Ingredients:

1 lb (450 g) beef steak, thinly sliced

1 tablespoon olive oil

1 green bell pepper, sliced

1 onion, sliced

1 teaspoon garlic powder

Salt and pepper to taste

1 ½ cups shredded cheddar cheese (170 g)

4 large flour tortillas

Directions:

Heat oil in skillet. Sauté bell pepper and onion until tender. Remove and set aside.

Add steak to skillet, season, and cook until browned.

Layer cheese, steak, and veggies on half of each tortilla. Fold and press down.

Cook on dry skillet until golden and cheese is melted, about 3–4 minutes per side.
