Healthy Chocolate Muffins with Hidden Veggies
These chocolate muffins are secretly loaded with nutrients from carrots and spinach while still tasting like a treat! Perfect for the whole family.
Ingredients:
1 cup whole wheat flour
1/4 cup cocoa powder
1/2 tsp baking soda
2 eggs
1/2 cup maple syrup
1/2 cup grated carrots
1/4 cup finely chopped spinach
1/4 cup milk
1 tsp vanilla extract
1/4 cup chocolate chips
Instructions:
Preheat oven to 350°F.
Mix dry and wet ingredients in separate bowls.
Stir in grated veggies, then fold into the wet mixture.
Scoop batter into muffin tray and bake for 18 minutes.
