Here's the truth about farming today: land is what it is. You can't always get bigger. 🤍

With multiple generations wanting to stay on this farm, and a crew who works alongside them like family, we needed another way to make it all work.

The creamery is that way. It's how this land keeps supporting the people who depend on it, now and for whoever comes after.

Same land since 1883. Still finding new ways to make it last.

Not all pasteurization is the same 🥛

Most milk you buy is pasteurized using high heat for a short time (HTST). We'll be using vat pasteurization instead: lower heat, longer time. Both methods make milk safe to drink, they just go about it differently. Vat pasteurization is slower, and some say it has a gentler effect on flavor and texture.

Either way, the goal is the same: safe milk, made well.

Meet a few of the newest additions to the herd. 🐄

We’ve welcomed a lot of new faces on the farm this summer, and watching them grow from wobbly-legged calves into strong, healthy cows never gets old.

Every bottle starts here, with taking care of our cows from day one.

Swipe through to meet a few of them. We might be a little biased, but we think they’re pretty cute.

🌽 It was a GREAT year for corn silage! 🌽

We put up plenty of good-quality silage to keep the girls’ feed bunks full and happy! 🐄❤️ There’s a whole lot of work that goes into getting this feed from the field to the silage pile, and we are thankful for every load that came across the scales this year.

Good crops don’t just happen. It takes good weather, long hours, a lot of hard work, and a whole lot of teamwork to get it done. From planting and growing it all summer to chopping, hauling, packing and covering it—there are a lot of people and a lot of hours behind every bite those girls will eat.

Now we can breathe a little easier knowing we have a good supply of quality feed put away for the months ahead. 🌽🐄

We are blessed beyond measure to be able to do what we do, and we never take a good crop for granted. Thankful for another good corn year in the books here at Fellwock Dairy! ❤️

Something to know before our milk hits the shelf: it won't be homogenized. 🥛

Homogenizing is a mechanical process that breaks down the fat so the cream blends in and stays mixed, it's just about texture, not safety. It's why store bought milk looks the same from top to bottom. Ours skips that step.

Take a look at this jar, see that faint line near the top? That's the cream, rising naturally the way milk used to look before that extra processing became standard.

That means a shake before you pour. It's not a flaw, it's just real milk.

Apparently we looked around Fellwock Dairy and thought… “You know what? We don’t quite have enough going on around here!” 😂

So… we bought sheep! 🐑

If you’ve followed us for very long, you know we’re always dreaming, always learning, and never afraid to try something new. We love agriculture, we love animals, and I’ve wanted sheep for as long as I can remember. So when the opportunity came along, we decided to jump in!

Don’t worry—the cows aren’t going anywhere. They’re still the heart of our farm. We’re just adding a few woolly personalities to the mix!

As we continue building the creamery and will soon be opening we want Fellwock Dairy to be a place where families can come experience agriculture, meet the animals, and make memories. These sheep are just one more step toward that dream.

We can’t wait to take you along for the ride! Fair warning… your newsfeed may soon be filled with adorable lambs, farm adventures, and a few stories of us learning as we go. We hope you’ll enjoy this new chapter with us! ❤️🐑

We've been digging through some old family records lately, and found something pretty special.

An original homestead certificate from 1883, when this land was first claimed by Mark's great-great-great grandfather, Wilhelm Fellwock, under Chester A. Arthur's presidency. It's been in our family ever since. In 1937, the farm passed to Mark's grandfather, Benjamin, who started the dairy. We still have his original deed from that time.

Over 140 years on this land, same family the whole way through. We're planning to frame both documents and hang them in the creamery, so the history isn't just something we tell you, it's something you can see.

A few more from the archives. 🤍

This community has been part of our story for a long time, and a lot of you recognize some faces in these old photos. Keep the memories coming in the comments, we love hearing them.

Farming here has always been about more than just us, it's been about the people around us too.

Progress on the creamery. 🏗️

Roof’s on, and windows arrived yesterday, hopefully going in soon. Still very much in progress, but it’s starting to feel real out here.

More updates as it comes together. 🐄

If you're new here, welcome. Here's what we're about. 🤍

Fellwock Dairy is family run at its core. We live here, our kids and grandkids live here too, and the work has always been hands on for us. Family also extends to the crew who works alongside us, because farms like this don't run without good people, and we consider them part of it too.

We've been farming this land since 1937. The creamery is bringing something new, but the heart of it stays the same: family... first and always.

Glad to have you following along.
