Ingredients:

3 beets medium size
3 blood orange medium size
Drizzle Olive oil

Preheat oven to 400 F. Place your washed and trimmed beets on a large piece of foil, drizzle with olive oil and fold the edges of the foil to make a pocket. Bake in the oven on the 2nd rack from bottom for 45-50 minutes. Let cool before peeling the skin off

Blood orange vinaigrette:
1 tbs. Stone ground mustard
1 tbs. Pomegranate molasses
1/2 tbs. Honey
Salt and black pepper
1/3 cup blood orange juice
1/4 cup oil

Measure every thing in a jar and give it a good shake. If you like the dressing creamier either use less juice or add 1 tsp. Mayonnaise

Time to assemble: I like to use a mandolin to slice the vegetables so I can insure even thickness. Arrange the beets and orange by overlapping top with fresh mint and drizzle the dressing

Note: dressing is so delicious and makes extra! you can make any other salad using it

Portokalopita / Greek orange filo cake

If you love oranges as much as I do you will definitely enjoy this cake. So simple yet packs a lot of flavor. One bite and you’re immediately transported to the mediterranean and the Greek islands with the sun and the breeze of the salty air hitting your face. Need I say more you just have to try it. So delicious.

Ingredients:
400 grams /16 lb. Filo sheets
4 eggs
180 grams sugar
Zest of 1 orange
250 grams thick yogurt
250 ml. / 1 1/4 cup sunflower oil
1 tsp. Vanilla powder
2 tsp. Baking powder
1 orange sliced in half moons (topping)

Syrup:
250 grams sugar
350 ml. Water
Juice of 2 oranges
1 cinnamon stick

-preheat oven to 250 F.
-separate the filo sheets and gather like an accordian, place on a baking sheet and dry in the oven for 45 minutes
-make the syrup by placing all the ingredients above in a pot bring to a boil the let simmer for 12 minutes. Set aside to cool
-once the filo is dry, in a large bowl start breaking the sheets into small pieces (this step is so satisfying)
-make the batter! Beat the eggs, vanilla, and sugar for 5 minutes. It will start yellow then it will turn into this beautiful vanilla color and double in size
-add the remaining ingredients, yogurt, oil, orange zest, and baking powder beat for 2 more minutes
-add half of the batter to the filo and stir to incorporate, add the other half and continue stirring. Let set for 5 minutes so the filo can absorb all the batter
-preheat oven to 350 F.
-brush a 9x13 baking dish with sunflower oil and dust with flour
-smooth the batter in the baking dish, top with the orange slices and bake for 35 minutes until golden
-once the cake is out of the oven, immediately pour all the syrup! Let set for 40 minutes by then all the syrup is absorbed, grab a slice and enjoy!

One pot creamy chicken pasta

Honestly this recipe is so forgiving it came together in 20 minutes perfect for a busy day and you probably have all the ingredients on hand

Ingredients

2 boneless chicken breast
8 ounce Baby Spinach
8 ounce mushroom, sliced
1 stick of butter, 8 tablespoons
2-3 tbs olive oil
Spices measure with your heart:
Salt, black pepper, garlic powder, onion powder, paprika and Aleppo pepper
1 1/2 cup heavy cream
1 cup water
Parmesan cheese and Gruyère cheese ( cut 2 strips of each cheese length wise )
Pasta of your choice I chose thin broken fettuccine

-wash and pat dry the chicken, add the spices to both sides except for the Allepo pepper
-in a large pan melt the butter and olive oil together until heated add the chicken and brown on both sides (browning will add to the color of the sauce) add the spinach it should cook very quickly.
-remove the chicken and spinach from the pan, let the chicken cool slightly before slicing into the preferred thickness (don’t be alarmed if the chicken is slightly pink in the middle as you will add it to the sauce to finish cooking)
-add the heavy cream, allepo pepper, water, Parmesan and Gruyère. Whisk slowly until the cheese melts and the sauce comes together. Crack a little bit more pepper and salt to taste add the pasta and stir to get coated with the sauce, add the chicken cover and let cook for 10-15 minutes or until pasta is cooked
-uncover add the spinach and serve (top with extra cheese optional)

Making French omelette for the first time is a bit challenging but it’s doable, take it from a first timer 😅 honestly it’s very simple ingredients but it’s all in the technique.

make banana pudding to celebrate fathers on their special day 🎉 so delicious and so easy.

Happy Father’s Day ☺️

Ingredients:
2 envelopes dream whip
1/2 cup milk
1 tsp. Vanilla
8 ounce cream cheese, room temperature
14 ounce can condensed milk
5 ounce instant vanilla pudding mix
3 cups milk
11 ounce box vanilla wafers
5-7 bananas peeled and sliced

If you can’t find dream whip substitute with 8 ounce whipped topping, omit 1/2 cup milk

Instructions:
-Whip the dream whip powder, milk and vanilla until stiff peaks form. Place in the fridge until ready to use
-In a large bowl beat the cream cheese until creamy, add the condensed milk, vanilla instant pudding and milk beat until thickened ( 4 minutes) add half of the dream whip and stir until incorporated
-in a trifle dish or any deep round dish you will start layering dividing evenly thing in 1/3
-start with a layer of the vanilla wafers then top with sliced bananas, after with the cream. Continue until you have 3 layers
-top with the rest of the dream whip
-cover with a plastic wrap and place in the fridge for 24- 48 hours to set and for the wafers to soften
-I like to crumble some wafers and use for topping with caramel sauce.

I like my matcha shaken not stirred with homemade strawberry sauce demurely pored over ice and milk. How do you like yours!

1 tbs. Matcha powder
1/2 cup hot water
2 scoops of vanilla ice cream divided
Homemade Strawberry sauce (refer to the reel before)
Milk of your choice
Ice
Vanilla syrup (optional)

Take advantage of strawberry season and make this strawberry sauce that’s perfect for anything you can think of! Ice cream, matcha, iced coffee or any kind of dessert, frosting etc. you can also make strawberry butter to go on your pancakes. So delicious 🍓🍓🍓🍓

2 lb. Strawberry washed and hulled
1 tbs. Lemon juice (fresh preferably)
1 tbs. Powder sugar

After washing the strawberries cut in half add to a blender along with the lemon juice and sugar and blend until smooth. Now you can either strain it or leave it as is for texture, (I made both versions and I loved both)
Place in a pot bring the sauce to a gentle bubble on medium heat before turning the heat down to low. Cook on low until thickened stirring occasionally and skimming the top about 3 times, keep a close eye and be patient it might take about 30 minutes

Once cooled keep in an airtight jar in the fridge. It will keep for one month, once opened use within 2 weeks

Ingredients:

1 pack phyllo pastry (16 ounce)
1 bottle carbonated water (330 ml.)
1 cup avocado oil or neutral oil
1 cup milk
2 eggs
1 tsp. Salt
400 grams cheese (I used a mix of Bulgarian cheese and queso fresco)
Parsley chopped (optional)

-preheat oven to 350F. Bake
-cut the phyllo into circles then unroll into strips
-whisk carbonated water, oil, milk, eggs and salt. Cut the cheese into small bite or crumble
-to assemble brush a 10x2 inch round pan with oil from all sides and line with parchment paper, spread half of the phyllo then ladle half of the mixture to cover the phyllo, add the cheese mixture, some chopped parsley then cover with the rest of the phyllo, add the rest of the egg mixture sprinkle with some flaky salt. Place the pan on a baking sheet and bake for 50 minutes or until the top is golden
-let cool slightly, using the tip of a knife, loosen the edges before you flip on a plate enjoy
Note: if you have a nonstick 3 inch deep pan it would be best! but since I don’t have one, I had to make do with what I have that’s why I recommend using a baking sheet under the pan because some of the oil will spell during baking, and you don’t want burned oil in your oven

-I reduced the amount of the oil in the original recipe by a 1/2 cup

-Parsley and flaky salt are my own addition, you can skip if you don’t like

Shrimp pineapple fried rice 🦐🍍could not be easier and so impressive

1 1/2 cup short grain rice
1 1/2 cup water
1 tsp neutral oil

16 ounce shrimp USA
3 tbs neutral oil
1 fresh pineapple, cubed
2 cloves garlic, minced
1 cm fresh ginger, minced
1 jalapeno seeded and chopped fine
6 green onions, sliced
1 tbs fish sauce
2 tbs soy sauce
1 tbs butter
1 egg, whisked

*in the bottom of a pan heat 1 tsp oil and stir in the rice to coat for 30 seconds then add the water, bring the water to a boil then lower the heat and cover let the rice cook until no more water is left. Let cool completely in the fridge before using in the fried rice. You can also use day old rice.
*once you cube the pineapple leave the shell inside the fridge until it’s time to serve.
*heat 1 1/2 tbs neutral in a large pan then add the shrimp cook until no longer opaque, remove from the pan.
*add 1 1/2 tbs neutral oil then add ginger, garlic, jalapeño, and green onions sauté for 30 seconds then add the cooled rice.
*break the rice then add the fish sauce and soy sauce stir it in while the rice is getting heated, add the pineapple and shrimp and finish stirring and frying the rice.
*adding the egg is optional! If you wish to lower the heat push the rice to the edges and make a well in the middle, melt 1 tbs butter then add the whisked egg and cook quickly. Once cooked stir within the rest of the rice.
*serve on the pineapple shells and garnish with fresh cilantro.
