Letβs make Russian mushroom soup ππ·πΊ
This is one of my favorite cozy Russian soups β simple, hearty, and SO flavorful without any cream.
Recipe:
β’ chicken (I used whole chicken leg)
β’ 2 big potatoes
β’ 1 small onion
β’ 1 medium carrot
β’ mushrooms (I used bella mushrooms)
β’ salt & pepper
β’ optional: mushroom/chicken bouillon cube for extra flavor
1. Boil chicken in water for about 40 minutes to make the broth.
2. Remove the chicken and shred it.
3. SautΓ© onion + carrot in one pan.
4. SautΓ© mushrooms in another pan.
5. Add potatoes, sautΓ©ed vegetables, and mushrooms into the broth.
6. Season with salt, pepper, and optional bouillon cube.
7. Cook until potatoes are soft.
8. Return shredded chicken back into the soup.
Perfect with fresh bread and sour cream
