Spring on a farm is basically Mother Nature hitting the ā€œreset buttonā€ā€¦ and handing you a very long to-do list. But I’m feeling good about the home and ready to start tackling outside after a winter break.

10 freezer meals prepped in under an hour and every one of them feeds my whole family for LESS than a drive-thru run.
Chicken pesto tortellini, cube steak gravy, cilantro lime chicken, teriyaki pineapple, beef & broccoli, and honey sesame chicken… DONE.

I update our 72-hour emergency kits every January, adding a few items each year. It keeps things simple and something I actually get done. This year I added a pocket stove, US road maps, and an ax.

Each kid has their own bag, and one day they’ll take it with them into their own homes. Peace of mind now… and a gift for their future families. šŸ¤

1 lb beef or meat
2 T of oil or butter
1 sm onion, minced
2 cloves garlic, minced
1/2 c breadcrumbs
1/4 c milk
1 egg
2 T parsley, minced
1 t salt
1/4 t oregano

Combine all ingredients (but oil) and use to fry. Or you can bake at 350. Cook until internal temp reaches 160.

You could use these for spaghetti, Caprice skewers, Mediterranean meatballs as a gyro, sweet-and-sour meatballs, etc. Enjoy!

Shouldn’t have changed into errand clothes before farm chores because I had chicken p**p on my pants and hay in my hair at Target! Feels good to be doing chores in 50 degree weather in January! People whose favorite season is winter, don’t live on a farm. šŸ˜‚
