Me 🤝 cowboy caviar (aka a dense bean salad)
This recipe literally saves me every week because a. It's so easy to make & b. it's the easiest way to hit my fiber goals. As a PCOS girlie, I neeeeeeed more fiber!
Ingredients:
1 can of Rotel with green chilies
1 can of black beans, corn, and chick peas-- drained & rinsed
1/2 onion, chopped
1/2 red pepper
1/4 cup of cilantro
Lime juice + salt & pepper
My secret ingredient is Italian dressing (don't knock it until you try it 👀)
