Blueberry muffins:
2/3 cup blueberries (can do less)
1 cup almond flour (leveled)
1 ts baking powder
1 tbs sugar of choice
2 eggs
3-4 tbs butter (I just threw some in)
1 ts vanilla .
Mix dry ingredients in one bowl and wet in another then combine
Bake at 350 until golden brown
I followed someone’s recipe for ingredients and just did my own measurements. Converting grams to ts,tbs, c and everything else just isn’t my thing so I winged it. They aren’t that pretty but they are actually pretty good. You can add more sugar if you want. These were easy, and fast to make. And it’s made with ingredients that I already had.

So with the weather turning colder here (Northwest Ohio) I've really been craving tomato soup and toasted cheese sandwiches (yes I use keto bread). I pretty much knew I'd have to give up on tomato soup because of the high carb count in it. Until I accidentally ran across this in Walmart the other day. I never knew keto tomato soup existed till then. I bought it and tried it, it was very delicious and creamy....👍

Chia pudding monster created today
4 oz of protein shake
2 tbs of chia seeds.
Mix together, let sit for 10 minutes. Stir again breaking up chunks. (After stirring 2nd time, I put lids on and shook up.)
Refrigerate for 2 hours or overnight.
Stir again and enjoy

Chia seeds are high in fiber, & omega 3s.. super good for heart health, weight loss, promote intestinal health, and lower cholesterol.
They are good mixed into yogurt, overnight oats, in smoothies. I have added them to pancakes too, as well as the pudding.. very versatile!!

Sometimes we just want cupcakes! After creating the recipe in the app they are 4 points each.
1 zero sugar yellow cake mix
1-20 oz can crushed pineapple in its own juice 
3 eggs
1/3 cup unsweet applesauce 
Use a bowl to catch and drain the juice from the can pineapple by putting in a strainer and mashing down. Add eggs, and one cup of pineapple juice and 1/3 cup applesauce to the mix. Beat then bake cupcakes at 325.
Icing…
Half tub of sugarfree Cool Whip
One can crushed pineapple drained.
Mix together and put on cooled cupcakes. Store in refrigerator.
Without cool whip icing they’re 2 points each.

1 small pkg of any flavor sugar free instant pudding mix
1/4 cup of whipping cream
I also sprinkled on top some zero sugar milk chocolate chips…

Was feeling like a crunchy snack without the guilt❤️

Cut each tortilla in eight pieces heat up avocado oil or vegetable oil whichever you choose pan fry, bake or air fry them and sprinkle with seasoning of choice once on the cooling rack. Super easy to make and they taste yummy

Low Carb Cauliflower Mac & Cheese with Hamburger
Ingredients:
* small head cauliflower
* 2 tbsp olive oil
* 1/2 tsp kosher salt
* 1/2 tsp course ground pepper
* 1 to 2 tsp onion powder
* 1 cup heavy cream
* 4 oz cream cheese
* 1 1/2 tsp Dijon mustard
* 2 cups hand shredded cheddar
* 1/4 cup shredded cheddar as topping
* 1 lb ground beef
* 1 medium onion
* 1/4 crumbled bacon
Directions:
Roast Cauliflower
1. Preheat oven to 425 degrees F. (You want the cauliflower to caramelize around the edges.)
2. Rinse and dry the head of cauliflower. (Don't skip drying it or it won't be as crispy) Cut it evenly into small florets, so it roasts evenly. Drizzle with 2 tablespoons olive oil and season with the salt, pepper and onion powder.
3. Spread the cauliflower out in an even layer on your baking sheet, then roast for 20-25 minutes, just until tender but still al dente.
While the cauliflower is baking:
4. Dice the onion in small pieces.
5. Cook and chop the ground beef and onion together.
6. In a sauce pan on low, combine the heavy cream, cream cheese, Dijon mustard and hand shredded cheddar cheese, (prepackaged shredded cheese does not melt well). Do not cook on high to melt this and do not let it boil or the cheese will separate and your sauce will not be good.
7. Grease a small baking dish (9x9). Add the roasted cauliflower florets, the cooked ground beef and onion and lightly mix. Pour the melted cheese sauce all over and mix again. Top with crumbled bacon bits and 1/2 cup shredded cheddar cheese. Return to over and back for 10 minutes.

Tater tot/egg bites? Not sure what to call them exactly. I call them cheap and easy breakfast everyone loves!
Spray a muffin tin
3-4 tots per hole (edited: frozen)
Scramble 10-12 eggs (I did 10 in a 4 cup glass measuring cup and poured over evenly)
Top with bacon pieces and cheese
Bake 375 until tops start to brown. If the tops get too brown your eggs will over cook. We put hot sauce on ours!
