CHILI LIME HONEY CHICKEN TENDERS + CILANTRO RANCH

(gluten free + dairy free)

Another Trader Joes Tuesday!! If there is one recipe you try from me….let it be this one!!! This flavor combo is unbelievable, but be careful they’re ADDICTIVE. The perfect amount of sweet, spice from the tenders + a cooling, zesty dipping sauce! AMAZING

Chicken Tenders:
-2 packages of Trader Joe’s organic chicken breast tenders
-1 bag of Trader Joes Chili Lime Rolled Corn Tortilla Chips
-1 cup GF flour
-2 eggs
-1 tsp salt + pepper
-1 tsp smoked paprika
-1 tsp garlic powder
-1 tsp onion powder
-honey

~Preheat oven to 400 degrees & line a large cookie sheet with parchment paper.
~Open the bag of chips and crush them in the bag with a rolling pin until they’re fine (breadcrumb consistency)
~In one shallow bowl combine the flour & spices. In another, beat the eggs.
~Dredge each chicken tender in the flour, the egg, and then place into the bag of chips. Shake the bag until the chicken is fully coated & place on the pan. Repeat this step for each tender
~Bake for 20 minutes and flip the tenders halfway through
~Remove from oven and drizzle with honey

Cilantro Ranch:
-¾ cup light mayo
-¾ cup dairy free Greek style yogurt
-2 TBS lime juice
-1 tablespoon olive oil
-1/3 cup dairy free milk
-1/3 cup cilantro chopped
-2 tablespoons fresh chives chopped
-2-3 cloves garlic minced
-¼ teaspoon salt
-¼ teaspoon black pepper

~Combine all ingredients in a blender until smooth & refrigerate until chilled
