Chicken Stew – A comforting, hearty dish perfect for any time of year!
Ingredients:
1 lb boneless, skinless chicken thighs or breasts (cut into bite-sized pieces)
2 tbsp olive oil
1 medium onion, diced
2 cloves garlic, minced
2 large carrots, peeled and diced
2 celery stalks, diced
2 medium potatoes, peeled and cubed
1 cup corn kernels (fresh, frozen, or canned)
1 cup green beans (fresh or frozen)
4 cups chicken broth (low-sodium)
1 cup milk or heavy cream (optional for creaminess)
1 tsp dried thyme
1 tsp dried rosemary
1 bay leaf
Salt and pepper to taste
Fresh parsley for garnish
Instructions:
Cook the Chicken:
In a large pot or Dutch oven, heat 1 tablespoon of olive oil over medium heat. Add the chicken pieces and cook until browned on all sides, about 5-7 minutes. Remove the chicken and set aside.
Sauté the Vegetables:
In the same pot, add the remaining tablespoon of olive oil. Add the onion, garlic, carrots, celery, and potatoes. Sauté for about 5 minutes, until the vegetables begin to soften.
Add Broth & Seasonings:
Add the chicken broth, thyme, rosemary, bay leaf, salt, and pepper. Stir well to combine. Bring to a simmer, then cover and cook for about 15-20 minutes, or until the vegetables are tender.
Add Chicken & Veggies:
Return the browned chicken to the pot. Add the corn and green beans. Stir to combine. If you're using milk or cream for a creamier stew, add it now. Let the stew simmer for an additional 10-15 minutes, stirring occasionally, until everything is cooked through.
Taste & Adjust:
Taste the stew and adjust the seasoning with more salt, pepper, or herbs if needed. Remove the bay leaf.
Serve:
Ladle the stew into bowls and garnish with freshly chopped parsley.
