Louisiana Seafood Gumbo Recipe 🔥

Here’s a simple & delicious recipe.

Ingredients:

For the Roux:
1 cup vegetable oil
1 cup all-purpose flour

For the Gumbo:
1 lb of boneless skinless chicken thighs
1 lb andouille sausage, sliced
1 lb blue crab, cleaned and cut into pieces
1 lb shrimp, peeled and deveined
1 large onion, finely chopped
1 large green bell pepper, finely chopped
2 celery stalks, finely chopped
4 cloves garlic, minced
6 cups seafood or chicken stock
2 bay leaves
3 tsp Cajun seasoning
1 tsp dried thyme
Salt and pepper to taste
1/2 cup chopped green onions
1/4 cup chopped fresh parsley

Cooked white rice

Instructions:

1. Make the Roux:
• In a large heavy pot or Dutch oven, heat the vegetable oil over medium heat.
• Gradually add the flour, stirring constantly, until the mixture turns a dark brown color (about 20-30 minutes). Be patient and keep stirring to prevent burning.
2. Season and sear chicken thighs on each side, remove from pot. I’m the same pot cook the vegetables and sausage.
• Add the onions, bell pepper, and celery to the roux. Cook for about 5-10 minutes, until the vegetables are tender.
• Stir in the garlic and cook for an additional 1-2 minutes.
• Add the sliced andouille sausage and cook until it starts to brown.
3. Build the Gumbo:
• return the chicken to the pot , add seafood or chicken stock, bay leaves, Cajun seasoning, thyme, salt, and pepper. Stir well to combine.
• Bring the mixture to a boil, then reduce the heat and simmer for about 50 minutes, stirring occasionally.
4. Add the Seafood
blue crab, shrimp, oysters (optional)
• Simmer for another 15-20 minutes, until the seafood is cooked through.
5. Finish the Gumbo:
• Stir in the chopped green onions and parsley.
• Adjust seasoning to taste.
6. Serve:
• Serve the gumbo over cooked white rice.

CEVICHE DE SALCHICHAS

INGREDIENTES
Salchichas
Pepino
Tomate
Cebolla
Cilantro
Chile (opcional)
Aguacate (opcional)
Limon
Clamato
Salsa de soya
Pimienta
Sal
Capsu al gusto

PREPARACION
Pelar y picar el pepino, picar el resto de los ingredientes incluyendo las salchichas excepto el aguacate en un recipiente mezclar y agregar sal, limon, capsu, pimienta, clamato y la salsa de soya al gusto.

Acompanar con tostadas -( mayonesa opcional)
Aguacate
Chile al gusto

Les cuento un secreto que cuando no tenía clamato solía agregarle puré pero no se lo digas a a nadien 😊😊

Procedimiento
Cocer la lenteja con agua, cebolla y sal.
Pasar a freír el cebolla, jitomate, chorizo, y por último la salchicha, y el tocino picado finamente

Ingredients:

1 lb baby carrots, peeled

2 tablespoons olive oil

Salt and pepper to taste

1/2 cup ricotta cheese

1 tablespoon honey

1 teaspoon hot sauce (adjust to taste)

Fresh parsley for garnish (optional)

Instructions:

Preheat the oven to 400°F (200°C). (10 minutes)

Toss the peeled baby carrots with olive oil, salt, and pepper. (2 minutes)

Spread the carrots in a single layer on a baking sheet. (1 minute)

Roast the carrots in the oven for 25-30 minutes, or until tender and slightly caramelized, stirring halfway through. (25-30 minutes)

While the carrots roast, whip the ricotta cheese until smooth and creamy. (5 minutes)

In a small bowl, combine honey and hot sauce, then warm it slightly in the microwave or on the stove. (3 minutes)

Once the carrots are done, remove them from the oven and transfer to a serving plate. (2 minutes)

Cheesy Baked Spaghetti
This recipe serves 6-8 people.
Ingredients:
* 1 lb spaghetti
* 1 tbsp olive oil
* 1.5 lbs ground beef (or ground turkey/sausage)
* 1 large onion, chopped
* 2-3 cloves garlic, minced
* 1 (28 oz) can crushed tomatoes
* 1 (15 oz) can tomato sauce
* 2 tbsp tomato paste
* 1 tsp dried oregano
* 1 tsp dried basil
* 1/2 tsp red pepper flakes (optional, for a little heat)
* 1 bay leaf
* Salt and freshly ground black pepper to taste
* 1/2 cup beef broth or water (if needed for sauce consistency)
* 1/2 cup grated Parmesan cheese, plus more for serving
* 2 cups shredded mozzarella cheese (or an Italian blend)
* Fresh parsley, chopped, for garnish
Instructions:
1. Prepare the Meat Sauce:
* Heat olive oil in a large pot or Dutch oven over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until browned. Drain any excess grease.
* Add the chopped onion to the pot and cook until softened, about 5-7 minutes.
* Stir in the minced garlic and cook for another minute until fragrant.
