Creamy Roasted Red Pepper Pasta with Protein Boost
Protein-packed and ultra-creamy, this Roasted Red Pepper Pasta comes together in under 30 minutes. Silky pepper sauce, Greek yogurt, and chickpeas coat al dente pasta for a comforting, healthy dinner. ππͺπ«
INGREDIENTS:
- 200 g penne pasta π
- 1 cup roasted red peppers purΓ©ed π«
- 1/2 cup Greek yogurt π₯
- 1/2 cup cooked chickpeas π₯«
- 2 garlic cloves, finely chopped π§
- 1 small onion, finely chopped π§
- 1 tablespoon olive oil π«
- 1/2 teaspoon smoked paprika πΆοΈ
- Salt and pepper to taste π§
- Parmesan cheese, grated for serving π§
- Fresh parsley for garnish πΏ
INSTRUCTIONS:
1 Cook the penne in salted boiling water until al dente, then drain, reserving 1/4 cup of the cooking water.
2 Meanwhile, sautΓ© the onion and garlic in olive oil over medium heat until translucent.
3 Add the roasted red peppers and cook for 2β3 minutes, then stir in the yogurt to create a creamy sauce (do not boil after adding yogurt to prevent curdling).
4 Stir in the chickpeas and paprika; season with salt and pepper.
5 Blend half of the pepper sauce with the reserved pasta water to make a silky sauce, then combine with the remaining pepper sauce.
6 Toss the cooked pasta with the sauce, adding a splash of pasta water if needed until glossy and creamy.
7 Serve warm with grated parmesan and a sprinkle of fresh parsley.
