Chicken Strips, Mashed Potatoes, Gravy, and Mac & Cheese! All homemade, costs about $6-$8 as I already had the chicken. 😊
Recipes:
Mac & Cheese!
4 cups uncooked pasta
6 Tablespoons butter
6 Tablespoons flour
1 1/2 cups milk
1/2 cup heavy whipping cream
3 cups shredded cheddar cheese
2 teaspoons salt
2 teaspoon pepper
1 teaspoon paprika
In a large pot, melt the butter over medium heat and whisk in seasonings.
Once the butter is melted, whisk in flour to form a roux (paste). Add the seasoning, to taste.
Whisk in the milk and cream and set heat to medium-high. Whisk in 3 cups of the cheese and continue whisking as the mixture cooks and
When the cheese has completely melted into the sauce, pour the sauce over the pasta and mix well!
Chicken Strips
2 lb boneless chicken: season with 2-3tsp of each- garlic powder, onion powder, paprika, lemon pepper, cajun seasoning, pepper & salt to taste
2 C buttermilk
2 C flour: add in 1-2 tsp of the above seasonings
canola or peanut oil for frying
Cut chicken to desired length. Season and dredge through the seasoned flour. Then submerge in buttermilk then flour again. Fry at 375 Fahrenheit for 8-10 minutes or until light golden brown.
Mashed Potatoes
4 pounds potatoes- peel and boil in water with 1 teaspoon salt and 1 tbsp olive oil
1/2 cup milk
1/2 cup heavy whipping cream
1/3 cup butter
1/2 cup sour cream
2 teaspoons of each: garlic powder, onion powder, paprika, pepper
Peel and Boil potatoes in a large pot until fork tender. Mash and add seasonings, then add butter, milk, cream, and sour cream. Whip/mix until fully smooth.
Gravy
1/3 cup butter
1/3 cup all purpose flour
2 cups milk
2 tsp black pepper
2 tsp garlic powder
2 tsp onion powder
1 tsp chicken bouillon powder
Add butter and seasonings and melt over medium heat. Once melted, add flour and whisk to combine.
Cook flour/butter mixture for 1-2 minutes.
Slowly pour in milk, about 1/2 cup at a time, whisking after each addition, until all milk has been added and no lumps remain.
Bring to a vigorous simmer, whisking frequently. Allow to simmer for about 3 – 5 minutes, or until gravy is smooth, creamy and thickened to your liking.
